Garlicky Baked Butternut Squash

delicious and simple! I didn't even measure anything, I just put in a bit of garlic salt (didn't have minced), pepper, a tiny bit of oil, salt, and parm cheese and mixed. It was awesome, my husband even loved it!

Stuffed Eggplant

We have started to have this dish once a week. We are counting calories, so I basically just used the basis of this recipe and made my own: ground turkey, parsley, italian seasoning (no bread crumbs, never miss 'em), chopped onion, and cooking spray instead of olive oil. It was like a stuffed pepper using an eggplant. The second time I added some canned tomatoes on top too. Delicious!

Simple Whole Roasted Chicken

My husband thinks this is the best chicken he's ever tasted and has requested it be a weekly item! I haven't had cloves on hand, so I eliminated those and used season salt instead of allspice (again, only because it's what I had). The nutmeg and cinnamon really does it!

Spicy Sausage and Peppers Over Rice

Simple recipe I was able to use with ingredients I had on hand. I didn't add pimento because I didn't have it and used red peppers, but it was still delicious.

Brown Sugar Shortbread Cookies

For some pizazz I added a little bit of chocolate frosting on one end and dipped it into some sprinkles since I was taking them to a kid-friendly event. They were simple and came out crispy and yummy.

Southwestern Rice

I added chicken also for a main dish. Simple and delicious! I didn't have all the ingrediants, but just mixed instant brown rice, corn (steam bag kind mixed with green and red peppers already), half can of black beans, and half can of zesty diced tomatoes. Garlic, and cumin to seasonYum!
