Grandmother's Buttermilk Cornbread

I made this tonight and my family loved it. I just melted the butter in a glass mixing bowl in the microwave, then mixed everything in that. I used half cup whole wheat flour and half cup regular flour. We don't like our cornbread sweet so I only used 1/4 cup sugar. My son inhaled this bread! It was pretty soft, even with the whole wheat.

Ground Sausage Spaghetti

I thought it was easy and delicious. I omitted the margarine and added fresh garlic with the pepper and onion. Even my three-year-old finished all of his!

Spinach and Potato Frittata

I had never made a frittata before. I tried scaling the recipe down to 4 servings, and put it in a smaller pan. However, there was still a lot of filling, so it took twice as long to cook because it was too deep in the pan, and meanwhile the bottom burned. Next time I will use the larger pan even with fewer portions. I also used a reviewer's suggestion of seasoning the potatoes, but then forgot to add salt later on, so the rest of the frittata needed salt after I had served it. Overall though, the hubby requested I make it again, just without the burnt "crust" on the bottom. :)

Bill's Sausage Gravy

We are trying for cutting out processed food and used this recipe instead of a packet. I also used whole wheat flour and all natural sausage and 1% milk. Served with homemade whole wheat biscuits. Still fattening, but not processed like I used to do it!

Crusty French Bread

So very pleased with this recipe! It's the closest I've come so far to copying store-bought french bread without spending hours in the kitchen! Just remember that you have a whole tray of steaming water in the oven and to keep your face away when you open the door to check on the bread. I almost steam-burned my eyeballs with this lack of common sense!

I added 1 tsp vanilla as suggested by another reviewer, and really liked the flavor. Definitely make sure you cream the butter and sugar extremely well! I was making mine while also holding a fussy 8-month-old, so didn't notice until I was forming the balls that there were chunks of butter still in mine. So a few of mine spread out too much and the dough cracked when I tried to push in the thumbprint. Used raspberry preserves and the flavors were so yummy even if the cookies weren't so pretty thanks to my errors.
