Cherry Pie IV

This recipe was perfect! I used another cherry pie recipe last year when cherries were in season, and it was much more watery. The filling for this was, as another reviewer put it, like silk. I didn't think the crust was bland. It's just plain, flaky, and buttery, which is perfect with all the flavor of fresh cherries. My husband is allergic to corn, so I used potato starch, and added an extra tablespoon for more thickening. I also used vanilla extract instead of almond, since that's what I had. Thanks for the delicious pie!

Three Cheese Baked Ziti

After my fiance mentioned that he wanted baked ziti for dinner, I found this recipe and used it as a base. I added fresh spinach and spicy Italian sausage to the layers, and have also added bell peppers since. Ziti pasta wasn't available the first time I made this, so I used rigatoni instead. Delicious recipe that tastes good as leftovers, too.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Moist, light nutty flavor and very chocolate-y (couldn't find 19 oz can of beans, so used 1 1/2 15 oz cans and 15 oz melted dark chocolate). Had a small birthday party with various people allergic to gluten, dairy, soy, corn, peanuts, etc and this cake catered to all of them (although we had to adjust type of chocolate, check for corn starch in baking powder, powdered sugar and the vanilla extract).

Fresh Pineapple Upside Down Cake

Excellent cake! I used less butter and more pineapple juice. Since I was out of vanilla extract, I added orange flower, which gave it a really nice aroma.

Cream of Cauliflower Soup II

This soup was marvelous. Cauliflower soup is my grandma's favorite and she practically licked her bowl. I love that there's no cream- although I did add just a touch (it was Christmas, after all). Added the carrots last and puréed them just a tad less so that there'd be a bit more color variation.

Horseradish Sauce

Used fresh horseradish, which I tripled in amount, with less mayo and sour cream. It was still mild, but a really nice addition to our Christmas prime rib.

Waldorf Sandwiches

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Very moist and soft muffin that's very easy to whip up. No cream cheese in France, so I used mascarpone cheese instead for the frosting. Omitted the canned pineapple and added extra carrots. To make up for the lost moisture and reduce calories, I substituted about 3/4 of the oil with orange juice. Had fun translating the recipe into French for my co-workers. Today I'm making it for my choir!

Mulligatawny Soup II

Had to omit a lot of the spices since Indian markets are few and far between in Paris, but the soup was delicious. Added chicken and extra carrot. A visiting friend liked it so much she wanted the recipe, but it was hard to give since I'd had to change so much.
