I made this in the crockpot. We had a ~4 lb piece of corned beef, carrots and cabbage. I put the corned beef on high for 7 hours. I had to use 4 bottles of Guinness to get it covered fully, used the full cup of brown suger and added the spices. With 3 hours left, I added cut carrots. With 1 hour left, I added wedges of cabbage.
The corned beef was great! However, I found the carrots to be bitter (my fiance thought they were slightly bitter but still liked them) and I also thought the cabbage was bitter (both my fiance and his buddy liked the cabbage).
I am sure I will make the corned beef this way again but not sure that I will add the veggies next time.
