Chef John's Pork al Latte

Turned out great! Tender & delicious! My only adjustment was using sour cream instead of creme fraiche, but that's only because my grocery store is in the stone ages and didn't have any. Thoroughly enjoyed it and will definitely make again!

Cheese Dipping Sauce

Very easy to make! Creamy & tasty! I was out of milk, so I used fat free half & half. I think using a block of cheese instead of bagged makes a big difference. Used only 1/2 tsp mustard and figured I'd adjust from there. The 1/2 tsp was good enough for my taste. Whisking constantly and adding the cheese in a little at a time also helps avoid it being gritty.

I really enjoyed this! I had fresh fish, so it took no time at all to cook. I would probably add a little more salt next time, but that's likely just my taste buds. Thanks for the recipe!

Spicy Vegan Potato Curry

I really enjoyed this! I reduced the cayenne to 1/2 tsp only because of personal preference. I also used some cauliflower (didn't have enough potatoes). It turned out great! I shared it with my sister and she has already requested the recipe. Thanks for posting!

Chicken Tortilla Soup II

I really enjoyed this! I cut back on the oil and skipped the cilantro (didnt' have any, but I find it kind of strong anyway). I added 1 can of black beans (rinsed & drained) and 1 can of corn. I think you need to adjust the chili powder and salt to your personal taste (I added more chili to mine), but what was listed was a good place to start. Before adding the chicken, beans, and corn I ran my immersion blender through it to combine the tomatoes & tortillas better. It thickened up really nice. My family loved it!
