Banana Oatmeal Bread

I made this using some healthy modifications- used maybe 2/3 or 3/4 cup of sugar, 3/5 BIG bananas, and whole wheat flour. I also used butter because I don't have shortening. And I added chocolate chips, because chocolate is good for the soul. I also used flaxseed substiute (1 T ground + 3 T water = 1 egg) for the egg. And like others have said, my bread didn't rise very well- it rose a little and fell. Tastes delicious still. However, I was wondering if the recipe ought to call for baking powder instead of soda..?

Tres Leches (Milk Cake)

So good! Got rave reviews from everyone who ate it. I was worried people would think it tasted like soggy cake, but they really liked it! I followed the recipe's ratios exactly, but used 2% milk, low-fat evaporated milk, and Cool Whip to make it a tad healthier. :) Enjoy!

Quinoa with Sweet Potatoes and Broccoli

A nice balanced dish. I used 2 sweet potatoes and fresh broccoli, and I added some ginger because I had it on hand- I think that gives the dish the flare it needs!

Chocolate Chocolate Chip Dream Cake

Make sure that you have 4 cups of milk on hand as well in order to make the pudding! I did not, and improvised with a combination of soymilk, half and half, and water. It worked, though- I got lots of compliments! It's a very weighty cake (because of the pudding), but not too rich, and not a huge depth of taste. Fun and easy to make!

Yellow Squash

Pretty good recipe! I even used old, slightly wrinkly squash and it turned out all right. I added less milk and butter than it said and put in about half a chopped onion and a clove of garlic, then added a vegetable boullion cube for more flavor. Tasty!
