Rhubarb Stir Cake

I would add less rhubarb, and maybe some apples or strawberries too. The cake was too moist, almost mushy in parts and lacking in flavour.

Award Winning Soft Chocolate Chip Cookies

It is an awesome recipe, and got rave reviews from everyone who ate them, but there was just something missing. Maybe I need to add some nuts. Excellent just not perfected yet for my taste.

Apricot Almond Rugalach

Fabulous cookies, I added chopped dried apricots to the jam and heat it to soften the apricots. Thanks for the recipe - its so easy to make these

Apple Pie Slices

The crust is wonderful, it should be doubled though, and make sure your apples are thickened, you really don't want any juices. Also a nice plain drizzled icing over top works well.

Paul's Pumpkin Bars

These were easy and as they are cooking now I can only hope they are as good as the batter was. I used 1/2c. sweetened applesauce and 1/2c oil (what I had on hand) and then reduced the sugar. I also added nutmeg, cloves and a little powdered ginger and some chopped walnuts and more cinnamon, even still it's missing something, maybe a little orange rind in the batter or icing?

Chicken Enchiladas I

To make these even faster, while you're making the sauce, bbq/grill the chicken and then mix the chopped hot chicken with the sauce and cheese, fill warmed tortillas and spoon a little sauce over each serving and top with cheese. I omited the baking, it just takes too long when everyone is hungry. To make the recipe lower in fat I omitted the butter and used 1/2 fat soup and lowfat sourcream.

Stuffed Peppers

these were okay, actually without the peppers the filling was fine since we had leftovers, we topped the filling with mozerella cheese. These though are not kid friendly, my brother 16, was not impressed.

Spanish Rice Bake

Oh my this was amazing!!!! I increased the recipe to 10 servings and that was enough for 2 meals for 4 large appetites. The caserole was even better with a little sour cream on top. Absolutely amazing.

Chocolate Puffed Wheat Squares

I have a similar version - 8c. puffed wheat 1/2c. butter 1/2c. corn syrup 2T cocoa 1tsp vanilla 1c. brown sugar I found that for chewy squares add all ingredients but the puffed wheat and butter, bring the mixture to a boil and then add the butter and then boil for about a minute, the longer it boils the crunchier the squares.

Hawaiian Wedding Cake I

The recipe was easy, so easy I was shocked, and there's no butter or margarine. The recipe needs a little salt though, but otherwise awesome and with the cream cheese icing it's perfect.
