Easy Microwave Chocolate Cake

Being a college student means having no time so this recipe is perfect! It's quick and easy and tastes good. I would have given it 5 stars except I had to tweek it a bit. I added 1/2 cup sugar as many people recommended which still wasn't quite sweet enough so the next time I made it, i threw in a hand full of chocolate chips and it made all the difference. If you make the whole recipe though, it's very large. I make about 1/3 of the portion each time and it makes a large soup bowl full already. Saying that, since I didn't make the full portion, the microwave time is much less. I cooked it for 2.5 mintues and it became a rock. For 1/3 of the portion, 1.75 minutes is plenty. It also rises quite a bit so remember not to fill your bowl to the top, you need a larger bowl. Don't forget to grease your bowl too.. I had a hard time taking it out when I didn't grease it enough. Other than that, the cake is very yummy and convenient. Will make it again.

Apple Cinnamon Oatmeal

I thought that this recipe was very bland. I would have decreased the amount of water and added more apple juice. I ended up adding some brown sugar to it at the end and increasing the amount of cinnamon.

Fried up nicely but it was very bland. Salt and pepper just didn't do it. I think I needs more spices.

Beth's Spicy Oatmeal Raisin Cookies

Instead of the shortening, I used 2/3 cup of butter and found that the cookie as it was too buttery and greasy with the full cup. It was also a little too sweet for my liking. I ended up using the full cup of brown sugar but cutting the white sugar down to 1/4 cup. Other than that, the consistency of the cookie was very nice and the taste was also pleasant. I would have added a little more cinnamon though, just because I like it to have a little more of a kick. The cookies stay moist for a at least a week.

Creamy Rice Pudding

First time making it and it was delicious. I don't like raisins though so I left those out. (Edit: Second time around I've reduced the amount of sugar to 1/4cup and found it perfect). Other than that, the steps were easy to follow and I was very happy with the results. Everyone who has tried it has loved it!
