These were a great! Fun, easy, fast, and cheap. It isn't the healthiest dinner ever so we won't have them often but this recipe is a keeper. Instead of leaving the tops 'open' I pulled the dough over the top to make sort of a stuffed biscuit. Yum!

Penne with Chicken and Pesto

Soooo good and easy! I didn't use the butter and used less olive oil than called for. Pesto has enough oil in it! I also used skim milk with a tsp of cornstarch wisked in instead of the heavy cream. It still came out GREAT! I added artichoke hearts just because I love them and they went so well with this dish. YUMM!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is SO good! I pureed it because I like creamy textured soups. Also, I couldn't find vegetable stock so I used chicken bouillon cubes. I only had two left (and was not going to run to the store a third time!) so I used 3 cups water to the 2 cubes--it still turned out GREAT! Next time I will add more apple and less carrot--I don't like the taste of cooked carrots and you can taste them in some bites :) Served it with fresh sourdough bread and a little plop of sour cream on top (instead of plain yogurt). Love how healthy it is--Overall super yummy and FABULOUS on a cool evening.

Pennsylvania Coal Region Barbecue

This meal is what we in the south call a "Sloppy Joe". I have tried several recipes that my 3 year old and myself liked but my husband wasn't crazy about. BUT, this one was a hit for all of us! It is by far my favorite and my husband actually likes it! The only change I made (bc my hubby doesn't like pieces of onions) is I use onion powder instead of onions. YUMMY! 5 stars!

Meatball Nirvana

I think this recipe calls for way more oregano and Italian seasoning than I care for. I'll try them again but cut those measurements down. They cooked up nicely and held together though :)

Spicy Hot Chicken Legs

These are too hot for me but my husband LOVES them! I bake them for about 50 minutes in the oven on 350 versus using the crock-pot. Delicious!

Chops With Fruit Stuffing

I really liked the stuffing but I wasn't a huge fan of the chops. My husband and son were opposite; they didn't like the stuffing but did like the chops. It was very easy to make and has a beautiful presentation. We won't be making it again though.

Bananas Foster II

This is heaven in a bowl! I found the recipe when looking for something to make with some bananas before they went bad. I can not believe how good it is! I followed the recipe exactly, minus the walnuts because I didn't have any on hand, and I wont change a thing next time I make it. My bananas were really ripe and did not turn to mush like someone else said. It was perfect!

Spinach and Feta Turkey Burgers

This is a great idea but the recipe needs a little more. I add a little pepper along with a generous amount of ranch dressing mix (the powder). My husband, who refuses to eat spinach, loves these burgers! Good stuff :)

Pumpkin-Oatmeal Raisin Cookies

The flavor wasn't bad but these should be muffins or bars instead of cookies. They were ok right out of the oven but gross the following day. Not a good cookie recipe.

Easy Mexican Casserole

This was wonderful! I used a can of black beans instead of ranch beans just because black beans are my favorite. I also used corn tortillas instead of chips, as someone else suggested, for less fat. I doubled the tomatoes and green onions. So good!

Slow Cooker Cranberry Roast

I hate traditional roast recipes--even the smell makes me ill. But this is PHENOMENAL! My roast wasn't quite 3 pounds--it was 2.83 pounds so I cut the cook time down 30 minutes to 7.5 hours. That was still a little too long---the roast was slightly overcooked. Next time I will go to 7 hours. Other than that it was perfect and super easy. I served it with mashed potatoes and fresh steamed green beans. Great match!

Morning Glory Muffins I

This is heaven in a muffin cup! YUMMMMY! I am having a hard time keeping my hands off of them. Instead of using 1 1/2 white flour and 1/2 c wheat flour, I used 1 cup if each. Next time I will probably use even more wheat flour. Also, I used matchstick carrots instead of grating them. Works perfect, saves time, and it's a little less clean up! GREAT recipe--I will use it for years to come.

Shrimp Lemon Pepper Linguini

I followed the recipe exactly.! My husband took one bite and wouldn't eat anymore and he is an "I'll eat anything" kinda guy. I think the thin sauce was the biggest turn off. We didn't enjoy the flavor at all.

Cream Cheese Jalapeno Hamburgers

The meat needs to be seasoned--I used a ranch burger recipe from this site. These were SO messy. I thought I had the perfect 'seal' and let them set up in the fridge all day. They ended up coming right apart. They're just so BIG. It was toooo spicy for me as well. Net time, I will make the burgers regular and use the cream cheese/jalapeño filling as a spread instead of a stuffing.

Baked Soy Lemon Chops

I put these in the marinade/fridge while I was at work so I could start cooking them as soon as I got home. They marinated for about 8 hours--I would suggest doing this if you have the time. Also, I got home late so I didn't have time to bake them in the oven. I pan fried them and they were still phenomenal! My only recipe suggestion is using lower sodium soy sauce....unless you like your food MEGA salty!

Golden Rum Cake

I was CRAVING rum cake and this recipe hit the spot! Except I got a little buzz from one piece! I will do as someone else suggested. First, use Appleton Rum in the glaze versus Bacardi and add the Rum to the glaze for the last minute of boiling. That should do the trick. Also, I only used about 1/4 cup of walnuts and it was perfect for me. Overall it was PERFECTLY DELICIOUS....and very pretty :) I will never use another rum cake recipe!! UPDATED SUGGESTION: This cake gets better and better as the days go on. If you are making it for something special, make it a few days in advance. It is to die for!!!

Slow-Cooker Chicken Tortilla Soup

This is delicious! I just put 3 large raw chicken breasts in the bottom of the crock pot with the rest of the ingredients on top and shredded them before serving. It was perfect. This will be added to our dinner rotation!
