Uglies
These were a great! Fun, easy, fast, and cheap. It isn't the healthiest dinner ever so we won't have them often but this recipe is a keeper. Instead of leaving the tops 'open' I pulled the dough over the top to make sort of a stuffed biscuit. Yum!

Penne with Chicken and Pesto
Soooo good and easy! I didn't use the butter and used less olive oil than called for. Pesto has enough oil in it! I also used skim milk with a tsp of cornstarch wisked in instead of the heavy cream. It still came out GREAT! I added artichoke hearts just because I love them and they went so well with this dish. YUMM!

Sweet Potato, Carrot, Apple, and Red Lentil Soup
This is SO good! I pureed it because I like creamy textured soups. Also, I couldn't find vegetable stock so I used chicken bouillon cubes. I only had two left (and was not going to run to the store a third time!) so I used 3 cups water to the 2 cubes--it still turned out GREAT! Next time I will add more apple and less carrot--I don't like the taste of cooked carrots and you can taste them in some bites :) Served it with fresh sourdough bread and a little plop of sour cream on top (instead of plain yogurt). Love how healthy it is--Overall super yummy and FABULOUS on a cool evening.
