Sopapilla Cheesecake Dessert

oh! i have made this for years, but i've always called it a coffee cake! everyone freaking loves it when i make it. i usually bring it along when my family goes to visit people. they adore it. great for breakfasts with a nice cup of coffee! you must try this recipe!

Potato, Broccoli and Cheese Soup

This was a good soup. I used veggie broth instead of chicken, onion powder instead of chopped (so i omitted the butter all together), added a 1/2 a teaspoon of garlic powder, a shake of dried dill, and around a teaspoon of hot sauce. Pretty good if you ask me!

Peanut Butter Cup Cookies

I don't really care for peanut butter, but these rocked my world! I just made them cookies and they were amazing. Bake them 8 minutes!!! no more! they're so good I'm going to have to make another batch, because I know they are going to go fast!

Mincemeat Cookies

a very good cookie. i used a mincemeat that was brandy and rum flavored and it only added a hint to the cookies. very good and i will make it again!

Brown Sugar and Spice Dry Ham Rub

This is a very good rub!!! I made this, then kept all the juice, sliced the ham, and then put it in the juice to keep it juicy and have all that rub in the juice get all over the meat. It was great!

Shepherd's Pie

I've always used cream of mushroom in my shepherd's pie. I didn't follow all steps though. I used 1lb ground turkey, 2 pouches of garlic & herb mashed potato mix and a little bit of nibblet corn. i did cook the potatoes with 1 can of veggie broth and 2 cups of water to give it the missing veggie flavor. i made this in a small square casserole dish and buttered the dish instead of sprayed it. i put a small portion of potatoes on the bottom of the dish, just enough for a thinish layer. sprinkled some corn on top of that. i browned my meat and added garlic salt, pepper, salt, and a sprinkling of basil. i added a large can of cream of mushroom soup and stirred them together. i put that in the dish, then put the remaining potatoes on top of that. i dotted it with butter and added another sprinkling of pepper. yum!

Twelve Minute Pasta Toss

I kind of teaked this a little. I bought some olives and feta mix in oil from the store olive bar. I cooked the chicken in 4 Tbls of that with a little extra EVOO. I used already minced garlic in a jar and added a small teaspoon of the oil they are in as well. Made it with bow-tie pasta. And when everything was done, I put the pasta in with the chicken and oil, then I added the olive and feta. Just to add some more cheese, I added a handful of mozzerella. Everyone loved it. It was a bit too salty for me though, because I didn't take into consideration for the olives. I would cut back on the salt if you decide to add them. It was good though.

White Bean Turkey Chili

This is a very good and interesting chili. I was a little worried about the cinnamon, but it ended up just slightly perfuming the chili and giving it an interesting taste in the back of your throat. The cocoa made it super silky. I did up the cumin to 2 teaspoons and the chili powder to 2 tablespoons. Very good!

Cheesiest Potato Soup

This was wonderful! The dill really adds something to it! I blended all of my soup, but I did leave out just a small bit of potatoes because I like the texture. This is a new favorite! Thanks!

Upside-Down Pizza

This was a good find! Truthfully, I was afraid to see how this would look when it was done. It was good regardless. I did teak the toppings to what we liked on a pizza, and I only used a jar of pizza sauce. We loved it! You should try it AND USE A SPATULA TO GET IT OUT!!!!!

Southern-Style Chocolate Gravy

Okay, this was an okay attempt at chocolate gravy, but I had to tweak it. I live in the south and we take chocolate gravy very seriously. I had to increase the cocoa to about 1/2 cup instead of 1/4, and I had to add about 1/4 teaspoon of salt to give it some flavor. I was surprised to find this recipe didn't have any salt listed. It was good after those two things.

I don't know if it was just me or what, but this recipe made way too much and my shell couldn't hold it all! 14 oz is a lot of liquid for a 9" pie shell to hold. Too messy.

Cinnamon Cookies II

This recipe does make a good tasting cookie, but I would not call it a cinnamon cookie. The molasses kinda takes over the cinnamon, but then again it doesn't taste like a molasses cookie. I tasted more like a cross between a brown sugar cookie and a molasses cookie. I suggest you tasting the dough and adding more cinnamon to suit your taste before you bake them.

I made this for a Christmas party and it was soooo good! Tasted like chocolate chip cheesecake. I did replace the pecans with crumbled up chocolate chip cookies and it was great! You should defiantly try this!!
