I made this last night for a pot luck and there wasn't a noodle left! It is by far the best mac n cheese I've ever had in my life. I used cavatappi instead of elbow macaroni. To prepare, I cooked 1 pound of noodles and used 20 oz of sharp + extra sharp cheddar mixed, 16 oz of sour cream, 6 oz of cottage cheese, 1/4 cup of whole milk, 1/2 cup of grated parmesean, salt and pepper to taste... use your hand to mix together with noodles. I layered another 4 oz of shreddered cheddar as a topping before adding the butter/breadcrumb mixture. I took everyone's sugggestions of adding less cottage cheese, more cheddar and some milk and it was absolutely wonderful! Thanks to all!!
