Dark Chocolate Cherry Fudge

Reviewed: Dec. 30, 2012
This was really good but a little too rich on the chocolate flavor....which is near impossible for me! I think next time I'll try it with some semi sweet vs all dark chocolate. I did use Ghiradelli morsels though so maybe they are stronger than Nestlé.

Baked Homemade Macaroni and Cheese

Reviewed: Dec. 30, 2012
Delish! I didn't add the crumb topping since I don't like how it dries out the Mac and cheese. Everyone loved this. Next time I'll add a little mustard powder.

Awesome Broccoli-Cheese Casserole

Reviewed: Dec. 30, 2012
This is great. I use half frozen and half fresh broccoli. I put the in a blender for a few quick pulses to break up the broccoli florets. I was pretty liberal with the cheese. My family loved this at Thanksgiving and asked for it for Christmas dinner. I'm sure it's a lot of calories so I'll probably only make it for special occasions. So nice to have another options from green bean casserole!

Alisha's Scalloped Potatoes and Ham

Reviewed: Dec. 25, 2012
Very good!! I chopped one medium onion and cooked it in the 1/4 cup butter until translucent instead of dried onion powder. I also added a teaspoon of ground mustard powder and a few dashes of dried dill. The ham I used was slightly sweet and it was the perfect combination of flavors. We ate three servings each on Christmas Eve even though we weren't hungry anymore, it was that good! Tis' the season for glutany after all! :). I also increased the cheddar cheese to 1 1/2 cups.

Spiked Fall Cider

Reviewed: Oct. 21, 2012
This is an excellent recipe! Everyone loved it. I think it needs a little more booze and something to cut the sweetness to be perfect. All in all everyone liked it a lot though. I made 18 servings and with only 4 people drinking it, it disappeared fast!

Honey-Garlic Glazed Meatballs

Reviewed: Oct. 21, 2012
Pretty good, I think I'll sauté the onions and some garlic next time, I would have preferred the onions more cooked and I think sautéing them will bring out a little more flavor.

Slow-Cooker Pepper Steak

Reviewed: Oct. 9, 2012
Very good. I added some additional beef stock and thickened with powdered mashed potatos instead of cornstarch. I also added a can of diced tomatoes because I like to add tomatoes :). I also used one orange bell pepper, one yellow and added a green bell pepper the last hour of cooking. Served over whole grain egg noodles.

Broccoli Cheese Soup III

Reviewed: Oct. 7, 2012
A couple pulses in the ninja for the broccoli and I avoided chopping. I added a small onion and garlic that I sauted in a little butter first, then added the broccoli. I think I'll leave out the garlic next time though. I also took others advice and used powdered mashed potatoes to thicken. I had to add a little more milk but is was worth it. Everyone loved this, served with a loaf of pilsbury's Italian bread, great for a cold day!

Greek Tzatziki

Reviewed: Mar. 19, 2012
Delish! I didn't use any lemon zest, used dried dill, put the cucumbers through the Ninja chopper, soaked up water with paper towel and used Greek yogurt. It saved me a lot of time and still tasted great. Everyone commented on how good it was!

Spiced Pumpkin Pie

Reviewed: Dec. 10, 2011
Great! I used a deep dish pie crust, so had to adjust the baking and temp. 3/4 of the way I reduced the temp to 325 and cooked an additional 20 mins....larger pie takes a little longer to set the middle. Turned down temp so I didn't burn the edges waiting for the center to set. Everyone loved this pie!
