Greek Pasta Salad I

I'd give this more stars if I could. My husband's friends have literally trapped me in a corner before asking when I would make my pasta salad next. It's that popular. I normally make a double batch (yes DOUBLE--two boxes of pasta!) and it will all be finished by the end of the football game! I made a few small changes: I use an entire box of penne pasta. I use a a can and a half of sliced mushrooms (not fresh, gross), I use the little pepperoni chunks instead of sliced, extra vegetables (all), and I also use Splenda instead of sugar and add a tad extra. Its delicious. You just need a really really really big bowl.

Grandma's Chicken Noodle Soup

I always turn this into a 12 qt. chicken noodle soup. To to this you need one entire roasted chicken from the store, deboned and diced, one bag of celery, one bag of carrots, about 15 ck bullion cubes, 5 bay leaves, some thyme, a bag of egg noodles, and pepper to taste (and a little cornstarch + water to thicken a little). That makes 12 qts and its delicious. My husband loves it so much he asks for it...in the middle of the Florida summer.

Pork Tenderloin with Herb Sauce

It was delicious! I used red wine vinegar and it made a LOT of sauce. It had a nice flavor, but was a little too vinegar-y for me (my husband liked it the way it was), so once the meat was cooked, I divided the sauce in half and put half in the saucepan and brought it to a boil and added 1T splenda brown sugar blend and one heaping tablespoon of cornstarch dissolved in 2T water to create a sweet and tangy glaze sauce. It was delicious!

Blueberry Breakfast Sauce

Delicious...works with splenda too! I don't recommend trying to keep it in the fridge for more than two days. Eventually the bond of the cornstarch deteriorates and it becomes lumpy blueberry soup instead of a syrup (I think this was 5 days later). Delicious on pancakes and over vanilla ice cream

Double Tomato Bruschetta

This is delicious! Was a huge hit at a house party. I'm lazy and I tossed everything in my tupperware Quick Chef, did a few turns and it was done! If you're not picky about how pretty your tomatoes are sliced, it takes literally about 5 mins to make.

Key Lime Pie VII

HUGE hit every time I make it. Around the 4th of July though, make sure you buy your key lime juice in advance--I checked seven stores that day and it was all sold out and I had to squeeze about 45 little key limes to get that much juice and it was BRUTAL. But its so worth it. I wouldn't really recommend mixing the zest inside--a guest once asked me if it was "grass" in the pie. Clueless, yes, but it made me realize that the green specks aren't too visibly appealing. Save the rind for some peel curls on top.

Creole Seasoning Blend

I used this for the Colleen's Slow cooker Jambalaya recipe and it worked out so well! It made a huge batch though, and I now also use it for chicken dry rubs, eggs, cajun burgers...everything. Its so delicious! Its a little salty and I like salt, but it was too salty for a few family members.

Spinach and Orzo Salad

THIS IS SO GOOD! I love it. My husband loves it. Just don't get bulk pine nuts from Whole Foods--you'll get pine nut mouth (or pine mouth). Google it. It sucks. Stick to the little bags they sell in the cooking aisle with the sliced nuts.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

This was delicious! I used mandarin oranges instead of navel oranges and also used dried cranberries. I made the dressing as written and substituted equal amount of splenda for the sugar. I thought that as written the dressing was too sweet, so I had to add more balsamic to take the sweet edge off. I'd add less sugar next time. Also, serve the dressing on the side. The dressing makes a lot and it's easy to saturate the salad if you dump it all on.

Peanut Butter Cup Cookies

Delicious! Followed the recipe as written and they turned out wonderful and got devoured. I plan on buying some bags of Reeses cups after Halloween on sale so I can make more for the holidays! HUGE hit at our squadron picnic!

Roasted New Red Potatoes

Delicious! I didn't follow the recipe exactly, as I added garlic salt instead of salt and also added some rosemary and fresh ground pepper. I used a gallon sized ziploc bag to mix the ingredients and it was so simple and a great side!

Best Brownies

These brownies were pretty stellar. I'm only giving them four stars because the fudge frosting was a pain in my butt. I mixed everything as written and it turned into a crumbly mess. I ended up having to heat it over the stove to mix and soften the frosting mess, and it turned into a giant chocolate dough ball (think Tootsie Rolls). Not what I was expecting. I had no problem coating the brownies with the "frosting", but it hardened up pretty fast. Like rock solid chocolate. I'd make it again, but I'd either double all the frosting ingredients with the exception of the powdered sugar or I'd use a completely different chocolate fudge frosting recipe. But those brownies were awesome and a quick fix for a brownie craving when there is no Duncan Hines in the pantry!

Flourless Chocolate Cake II

I made this recipe for my dad who has celiac disease and requires a gluten free diet. I followed the recipe as written and served with strawberries and vanilla ice cream. I'm not giving this five stars because as a "cake", it disappoints. However, it is a great brownie. It is very fudgy, moist, and dense (not cake-like at all). I would make this again as a brownie in a heartbeat. Also, for those who require gluten free diets, this recipe is way better (and cheaper!) than the packaged GF brownie mixes you buy at the health store.

My Country Style Steak

I am giving this four stars only because of the lack of aesthetic appeal. It looks pretty nasty...think cafeteria food. However, it tastes really good! Has a good country fried steak flavor. I think next time I might add some sliced onions and maybe some mushrooms. I served it over egg noodles.

Blueberry Cream Muffins

Great recipe! I wanted to make it a little healthier so I replaced the sugar with Splenda and the oil with 1 c. of applesauce. I also used fat free sour cream and added some cinnamon. They turned out wonderful and absolutely delicious! I'm glad I didn't half the recipe as I had planned.

Braised Balsamic Chicken

This has become one of my favorite dishes in the house! The balsamic is pretty tangy, so to sweeten it up a bit, I use two onions and once they caramelize, it sweetens up quite nicely. Slice them THIN though, it looks better and cooks up quicker.

Chicken Tikka Masala

I'd give this five stars, but it seems to be a little too salty as written. For my taste, I'd reduce the salt a little. I also use fat free half and half and simmer on low and it thickens up pretty well, not to mention its a lot better than heavy cream. Your waistline will thank me. Oh and its pretty spicy as it is, so if you like it spicy, no need to add extra--plenty as it is!

Chicken Piccata II

The flavor of this dish was okay (a little too buttery), but the texture was nothing to get excited for. It was probably my own fault, but I thought it was a little soggy on the outside. I should have turned the heat up more to brown them more I guess? I probably won't be making it again.

Not a bad combo of spices, but for me it seemed as if a lot of the liquid in the soy sauce and fish sauce evaporated and left the dish SUPER salty.
