My Country Style Steak

I am giving this four stars only because of the lack of aesthetic appeal. It looks pretty nasty...think cafeteria food. However, it tastes really good! Has a good country fried steak flavor. I think next time I might add some sliced onions and maybe some mushrooms. I served it over egg noodles.

Angela's Awesome Enchiladas

I am giving this recipe three stars, not because they tasted bad, but it was way too much work (and too many calories!) for the end result. I decided to switch up my enchiladas and try this recipe instead of my classic standby, and it just wasn't worth it. My husband enjoyed the taste, but still thought my original enchiladas (whcih take 1/3 of the time) are better.

Pork Tenderloin with Herb Sauce

It was delicious! I used red wine vinegar and it made a LOT of sauce. It had a nice flavor, but was a little too vinegar-y for me (my husband liked it the way it was), so once the meat was cooked, I divided the sauce in half and put half in the saucepan and brought it to a boil and added 1T splenda brown sugar blend and one heaping tablespoon of cornstarch dissolved in 2T water to create a sweet and tangy glaze sauce. It was delicious!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

I thought this tasted pretty disgusting. The dry rub of seasonings was delicious, however the glaze tasted just like it sounds--lumpy apricots and an over abundance of BBQ sauce. We wiped the sauce off and then it was bearable. Anyone can dumb BBQ sauce on a tenderloin, definitely nothing special.

Blueberry Cream Muffins

Great recipe! I wanted to make it a little healthier so I replaced the sugar with Splenda and the oil with 1 c. of applesauce. I also used fat free sour cream and added some cinnamon. They turned out wonderful and absolutely delicious! I'm glad I didn't half the recipe as I had planned.

Roasted New Red Potatoes

Delicious! I didn't follow the recipe exactly, as I added garlic salt instead of salt and also added some rosemary and fresh ground pepper. I used a gallon sized ziploc bag to mix the ingredients and it was so simple and a great side!
