Pumpkin Gingerbread

This bread is yummy! I did as others suggested and turned the oven down to 325. I also cut the sugar down from 3 cups to 1 cup brown sugar and 1/2 cup white sugar. I used 1/2 oil and 1/2 cup of applesauce as well and doubled the ginger, allspice, and cinnamon. I used 1 3/4 fresh pumpkin puree instead of canned. Delicious!

Pumpkin Maple Pie Supreme

This pie was delicious. My only substitution was to cut the brown sugar back to 1/3 cup. (Once I was out of cream and had to substitute 1 cup sour cream and 1/4 cream cheese and it still turned out yummy).

Honey Oatmeal Bread II

I love this bread! I tried to make it a bit healthier by subing white whole wheat flour, cutting back on the honey, ommitting the toping, and addding 2 tb ground flax. I also used 2 pkgs of yeast to help the whole wheat rise like bread flour. I let my kitchenaid do all of the kneading. This is my family's new everyday bread. Thank you!

Chocolate Chip Banana Muffins

Excellent! I tried to make these muffins a bit healthier by making a few substitutions as follow: white whole wheat flour for AP flour, unsweetened applesauce for the oil, 1/4 sugar instead of 3/4, a tablespoon of ground flax, and skim milk for yogurt (didn't have yougurt on hand). I also added cinnamon, ginger, nutmeg and a little more bannana. Even with the healthy substitutions my four year old and husband ate them up! Will definately make these again! thank you!

Creamy Coconut Cake

I made this cake for a shower & it was a big hit! I did as others suggested and added 1 tsp coconut extract to the batter and iced the cake with sweetened, vanilla spiked whipped cream. Delicious!

White Bean Chicken Chili

A great healthy dinner! I did as other reviewers suggested and used salsa verde. I only used jalapeno juice and 2 minced peppers instead of the can for my little one. I added more cumin and a pinch of smoked paprika that I had on hand. Since the sauce was very thin i pureed an extra can of beans (minus the liquid) and added it as a thickener. Good fall dinner. Thank you!

Strawberry Pie II

Wonderfully fresh! I mashed 1 cup strawberrries and left 3 cups sliced. Added 1 tsp. vanilla to the cooked mixture and I cut the sugar to 1/2 cup and the water to 1/2 cup. A classic summertime treat! Thank you.

These are so quick and easy. I added cheddar cheese and garlic powder. I did not have a muffin pan on hand so I baked them in a small pyrex and they turned out perfectly! Thank you.

French Baguettes

This is the absolute best bread recipe! I proof my yeast, water, and sugar for 10 min., add the flour and knead in my mixer for 5 min., let it sit 10 min., sprinkle the salt in and let it rise in an oiled bowl for 30 min. It smells and tastes like heaven! Thank you...our family loves this bread!

Easier Chicken Marsala

This was excellent. I followed other reviews and doubled the wine, added 1 c. broth, and fresh garlic to the sauce. I simmered the sauce for 30 min. to thicken. I also put Italian seasoning in the flour which added some extra flavor. Delicious. I will be making this again and again.

Easy Batter Fruit Cobbler

I made a fresh peach cobbler that was absolutely delisious! The only alterations were to cut the butter to 3 Tbs., add 1 tea. vanilla, 1/2 tea. cinnamon and 1/8 ginger. My husband said it was his favorite dessert.

Jay's Signature Pizza Crust

I substituted 1 cup of WW flour, doubled the brown sugar, and added italian seasoning and garlic salt to taste. I also pre-baked the crust in my pan for 10 min. before topping. It was perfect!

Tomato and Basil Quiche

Delicious! I used the basic recipe and added 2 cups chopped fresh spinach with 1 tb. italian seasoing to the onion mixture. Omitted the tomatoes and just mixed the fresh basil in with the whisked eggs. My husband and two year old loved it. I made a crustless egg white version for myself and it was very good too. Will make again. Thank you.

Cream Cheese Sugar Cookies

PHENOENAL!!! That is literally how good these cookies are. I followed some suggestions and changed a few measurements. I used 1 1/2 c. sugar, 1 t. salt, 8 oz. cream cheese, 1 t. vanilla (omitted almond due to allergy), 2 3/4 flour, 2 egg yolks, and 1 t. baking powder. I put the dough in the freezer for about an hour and a half and rolled out between waxed paper baked eight minutes. I topped with "cake with buttercream decoration" frosting from this site. PERFECTION.

Spanish Rice II

Very FRESH! A great alternative to the sodium boxed stuff. I subbed brown rice cooked in chicken stock and fresh tomatoes and peppers. The whole family enjoyed it. Thank you!

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Tasted great! I used lean ground turkey and fresh tomatoes. I omitted the cornmeal and used a few tablespoons of tomatoe paste intead. Added a little hot sauce. Went well with soft tacos.
