Big Soft Ginger Cookies

These are such good cookies!! But I've found these subs are important: nutmeg instead of cloves, 1/2 cup softened (not melted) butter instead of 3/4 cup margarine, 1 cup brown sugar instead of 1 cup white (still use white to coat each cookie). The batter is a little dry, when flour mix goes into molasses mix (due to reduced fat content I think) but I just add a teaspoon of water at a time to moisten until the dough is workable. These cookies are very similar to those sold at Starbucks but a little less sweet, which is good in my opinion. They are totally addictive. :) Please don't give up on the recipe if you find the cookies are a little doughy/raw in the middle once baked, they just need a bit more time in the oven. I had to bake 3 batches before I found the perfect baking time in my oven (9 minutes) but it was well worth it. I suggest cooking 1 or 2 cookies at a time until you find the perfect time because it makes all the difference. Also, although the recipe says 'flatten slightly' I pressed each cookie down with a fork in a crisscross as I would a usual cookie. I forgot that step one batch and they were doughy/raw. Still, once you get the recipe 'right' it is so so right!! Thank you, thank you so much for this recipe!

Bacon and Date Appetizer

I have made these a few times and they are always a great hit at parties. I've had the best results with dates that were sealed in their own container (I used bulk dates last time and they were slightly dry). Also, bacon really needs to be old fashioned thick sliced bacon, it makes a HUGE difference and then you only need 1/2 a slice for each date. I use 1/2 a pecan and feta to stuff the dates and they are awesome!!! Thanks for the great idea.

Tuatha'an (Gypsy) Soup

Love this soup, a bit spicy for Mom but Ben enjoyed, said it reminded him of Gumbo I made that blew my socks off with it's heat... this is more mild than that. Marianne loved it, asked for recipe.

Beef and Wine Soup with Dumplings

Great recipe, hubby & Mom loved it. I used 2 more tablespoons flour for dumpling recipe & cooked for 15 min instead of 10 with the lid on pot whole time. Also used ground beef instead, 3 more garlic cloves, vegetable broth instead of beef and a can of tomato sauce instead of juice. Delish! Thanks for the recipe. A keeper.
