5 Minute Cookies

Very nice. I cut the sugar by half and found these were just right for me. Also, didn't even bother with heating any of it - mixed all the ingrediants together saving the milk for last, and added just enough milk to bring the mixture together. Set just fine in the fridge and was delightful pre-fridge too!

Princess Cookies

Very tasty. I have also made this recipe subbing in grapefruit zest and grapefruit juice for the lemon and it is equally delicious. For a bit of fun, I make this (and many other cookies) on my waffle iron instead of baking.

Zucchini Stew

Made rice and barely in rice maker and mixed in after everything was cooked. put zucchini in at same time as diced tomatoes. used soya sauce instead of salt and pepper to season. easy and simple - can't complain and kids enjoyed.

Homemade Chewy Granola Bars

Delish! Left out the peanut butter (so I could send to daycare/ school) and sub'd in extra sunflower seeds and a couple tablespoons of sunflower oil, as well as sub'd graham cracker crumbs for the wheat-germ (just what I had on hand). More like cookies, but kids are in love, so I think it is a good compromise!

Basic Crepes

I make these all the time for my family. I use a microwave safe mixing bowl to melt the butter, then throw in the water then milk, then the eggs, then the flour and just wisk it all together - turns out beautifully every time. Also, I use a wide flipper or a counter scraper to spread the crepe out in the pan after pouring batter in - rinse between each crepe - and they are always as thick or as thin as we'd like!

Golden Pancakes

These are awesome - we have them a LOT! I sometimes use less eggs (3 instead of 6) for a more pancake-like consistency. I usually add Chia seeds just cuz. I usually drop some dried cranberries or raisins in as they are cooking - or chocolate chips for a very special treat. I occasionally leave out the milk (just makes more pancakey). I serve with powdered sugar mixed with cocoa or powdered sugar mixed with cinnamon. Really fun recipe to play with and enjoy!

Zucchini Brownies

Turned out beautifully even though I didn't have enough zucchini (only 1 cup) so had to add water. Also, I subbed in sunflower seeds for the walnuts and my 4 yr old was thrilled to have, "crunchy parts that taste good!"

Orzo with Parmesan and Basil

Perfect! Didn't have Parm, so sub'd Nooch and it was amazing! Did it in the rice maker and had to settle for dried basil, but even with all that, this recipe is 100% a keeper!!

Sunday Brunch Eggs

Awesome! Made it on a weekday morning for the kids and it was perfect!! Used parchment paper to line a lasagna pan and clean up was done in seconds. The only change I made was I piled everything onto slices of bread and cooked it all together - wasn't a crunchy toast base by any means, but made it simple to serve, and the kids loved the idea that it was toast, but they could chew with ease.

Sausage Cabbage Bake

This was GREAT! Used mild Italian Sausage, pre-cooked (leftover) rice, red lentils, and a red pepper instead of green since that's what I had. Only took about 10 minutes of simmering since the rice was precooked and the lentils were red. 20 minutes start to finish! My 1 yr old, 4 yr old and husband gobbled it up!

Pizza Dough I

made it following directions but added a bit of dried oregano and dried basil. rolled out 2 crusts - 1 bigger and thinner and 1 smaller but thick. both were great, but the thicker one was better.
