Peach Cobbler

This was really really yummy! I caught my cousins husband eating it out of the pan at 11pm after I had served it at dinner...he couldn't get enough! He told me it was just like a dessert that his mother use to make in South Africa and it was taking him back to his childhood!

Cheezy Potatoes

This was really good - I use to have a similar recipe that I loved even more..but I can't find it anywhere! Perhaps it wasn't quite the same because I used fresh potatoes instead of hashbrowns..but it was still really good and everyone loved it!

Roesti

Oh my goodness! I've been searching for a good roesti recipe since moving back from Switzerland where I enjoyed it at restaurants and from the supermarket! Who knew it could be so easy?! For this recipe I found it important to keep a lid on the frying pan..I did this and found that the potatoes got a lot softer because they boiled a little bit more from the excess steam...I also like to mix it up a little bit so one time I added a little bit of chopped onion and sauted it in the butter before adding the potato..yum yum! To flip the roesti I simply did what I do with omletes...I waited until a nice crust had developed on the bottom and I could move it around a little bit in the pan if I shook it...I then slid it gently onto a plate, flipped my frying pan over the roesti that was on the plate while holding the plate and turned the whole thing over while holding the bottom of the plate and the handle of the frying pan in one quick motion so that the top of the roesti was now on the bottom of the frying pan! Easy as can be! :) I also added some grated cheese to the top of it and stuck the lid back on while the bottom cooked - cheddar of course..mmm! That part definitely isn't Swiss..but I love cheddar..it's the best of both worlds! This has become a very popular and very asked about potato dish in our house!

Candied Apples II

I used this recipe to make HUNDREDS of candy apples for an event we were having and got so many compliments about how great they were! Everyone loved them and they were really easy to do..the worst part was just waiting for the candy to get up to temperature..and then cleaning out the pots afterwords!

Chunky Tomato Potato Soup

So good! I loved that this was so easy and so hearty! Definitely warmed us up on a cold fall evening..and when I told my mom I made a soup from scratch later that night..she was impressed that I came home from work and still had time to make a homemade soup in time for dinner..definitely a keeper!

Prize Winning Baby Back Ribs

I love love LOVED these ribs! This is coming from a girl who has previously refused to eat ribs her entire life! I finally decided to take a stab at making them for the other people in my life that love them and the results meant that there were no leftovers! The tip about removing the membranes? GENIUS. The rub? Awesome! I added a little bit of garlic power and a few chilis to the rub - we like ours spicy..and then i mixed in half a cup of pure maple syrup into the cup of bbq sauce..which made it the perfect combination of sweet and spicy! I also opted to make them in the oven as it's getting chilly here and didn't want to stand outside at the BBQ. I did the rack of ribs in the convection oven for 2 hours at 200 degrees and then another 2 hours at 250 degrees..then I cranked it up to 450, cut the ribs apart so they could get really saucy and doused them in sauce....I let them cook for 7 minutes..took them out..turned them..doused them in sauce again and let them bubble and get sticky in the hot oven for another 7 minutes...and oh my god..they were SO GOOD! I will DEFINITELY be making these again and again..this recipe has turned me into a rib lover instead of a skeptic!!
