Ratatouille

This was a big hit! I sauteed the onions with the eggplant and made that my base layer. Before sauteing the eggplant, I tossed in a little salt and let sit in a colander to make a little less bitter. I didn't include any other salt. I included dried thyme to the eggplant, and a bit of paprika to the tomato layer. I doubled the recipe and it was enough for two 9x13 pans. I covered with foil for the first 45 minutes then removed the foil and continued baking for another 15 minutes to allow some of the juices to evaporate and to brown the cheese on top. I ended up with a fair amount of liquid, but served the dish with a slotted spoon and with couscous. People took extra liquid to soak their couscous.

Shortbread Pie Crust

Used this for pecan pie. The pie crust stayed in place with the weight from the filling. Very tasty!

Bow Ties with Sausage, Tomatoes and Cream

Delicious! I used radiator pasta, half and half instead of cream, diced canned tomatoes (not Italian style because the store was out of that), hot Italian sausage, and shallots instead of onions. I also added a bunch more garlic. I didn't cook the sauce with the pasta despite the recommendation from the submitter (so we could have a low carb option). Instead, I just cooked the sauce down until it wasn't watery. I topped the dish with sauteed baby broccoli and fresh shredded parmesan.
