This was yummy! I took input from the reviews & used; brown rice, 1 can of diced tomatoes, 1 roma tomato chopped, 1 tbs. chopped garlic. Since I used brown rice & like my stuff really flavorful, I also added a little lemon pepper, red pepper flakes, and mrs. dash. I love feta, but if you are cutting calories I don't think it would make a ton of difference if it was left out. I also tried it with various peppers and preferred the green. Will be keeping this in my recipe book!
