Cake Mixes from Scratch and Variations

I used 1/2 cup vegetable oil instead of crisco, 1 1/3 cup milk, only 1/2 teaspoon of salt and 1 1/2 teaspoons of pure vanilla extract and this came out fluffy and so good!!

Fluffy Pancakes

These were delicious, and made just enough to feed the three of us with one pancake leftover. I did add 1 tsp. of vanilla. Making the milk/vinegar mixture is basically making buttermilk, which could be used as a substitute.

Broccoli Corn Bread

This was good, but i am used to broccoli corn bread being a little sweeter, so I added 1/4 cup of sugar and used sauteed vidalia onion. Also if it is for just your family I would half the recipe because it makes a lot!

Big Al's K.C. Bar-B-Q Sauce

This is a very sweet bbq sauce, but it is probably the best i have ever tasted. My husband loves it, the only thing I change is not adding the liquid smoke, because I don't keep it on hand and I don't like smoke flavor.

Buttercream Icing

This is the wilton recipe for butter cream frosting, and although it is good, it is much better with all butter. I use this recipe for all of the cakes I make. I make character cakes, wedding cakes and you name it. If you use all butter it is great tasting and great for decorating!!

Ruth's Grandma's Pie Crust

I use this recipe for all of my basic pies. I do use cold butter, which I cut into the flour instead of shortening. Makes a lot, but you can always freeze the extra to use later!!

PHILADELPHIA New York-Style Strawberry Swirl Cheesecake

This makes the best cheesecake ever! You don't even have to add the strawberry to it. I switch it up and use this same recipe for all different kinds of cheesecakes. I also always have trouble getting it to cook like I want it because it makes so much so I halve the recipe with a full crust and bake it 38-40 minutes in a 9 inch spring form pan and it comes out perfect everytime!!

Pecan Pie Cookie Bars

My husband liked these the first day better because they weren't as sweet, but I thought they were better the second day because they were sweeter. I thought they were good, but not great.

Best Chocolate Chip Cookies

Great tasting recipe, make sure to use level cups of flour. I don't even bother with the water to dissolve the baking soda in, I just leave it out and it makes no difference, I have done it both ways.

Pineapple Upside-Down Cake VII

I made mine in a 13 by 9 pan and used pineapple chunks and almost a whole jar of cherries. It was moist and delicious, but it was very sweet.

Soft Gingersnaps

These cookies are delicious, the only dessert to get completely eaten at my family Christmas party. Make them just as directed and they come out perfect!!! Makes a lot of cookies, but don't worry they will get eaten!
