Pecan Pie V

Very good pie, everyone at the table loved it! Only comment I have is similar to other reviewers - i found this pie to be a little "empty" looking... I will try adding 1/3-1/2 of the recipe next time to the filling, however it bakes up so high i'm not sure if that will work.

Libby's® Pumpkin Roll with Cream Cheese Filling

I made a low-cal version that saved 972 calories, 54 carbs, 96 grams of fat, and 785 grams of cholesterol and it turned out great! I used the following as substitutes: 3/4 cup eggbeaters instead of eggs, 2/3 cup granulated sugar & 8 packets Truvia, 1/2 cup walnuts, chopped, low fat cream cheese, 6 tablespoons smart balance. If you use the truvia be sure to keep some sugar in the recipe and to bake at a lower temp (350 worked for me).

Perfect St. Patrick's Day Cake

Really delicious, half the people who ate it wanted the recipe! All I had was the mint bailey's, but it worked great - everyone enjoyed the slight hint of mint, and it went well with the St. patty's theme. Will definitely make again! The only change I made was to make a lot more frosting - twice as much, actually, which just covered my double layer round cake. And on the same note, there was twice as much chocolate mixture as needed!

Sour Cream Dressing

The garlic is a little strong but I like garlic so it worked for me! Couldn't feed it to my sister, though. Not a crowd pleaser per say, but I'll be making it for myself again :-)

Stuffed Strawberries

So easy, so pretty, and so impressive! I'll be making these for every bridal shower and brunch I can. I mixed nutella into the mixture for an extra bit of deliciousness.

Sweet Potato Cheesecake

The zest ended up being too strong of a flavor for me... I didn't really get the sense of sweet potato. And I would have preferred the cake itself to be a little creamier. An okay recipe but I think I'll be looking for greener pastures.

Mine too came out a little runny the first time around - I doubled the cornstarch and used whole milk the 2nd time around, and it came out perfect! Great recipe!

Pumpkin Dip

Yummy and a great way to use up the extra pumpkin lying around after pie making. Be sure to cream the cream cheese and sugar before adding the other ingredients, or the mixture will come out lumpy. Beware, this makes a LOT of dip! I ended up handing it out to 3 different families and still having enough for us.

Holiday Cranberry Chutney

Amazing! Nothing but compliments from the whole family! Make sure to use a large enough pot so the mixture can reduce without overcooking. The first time I made this recipe I had to pour it into a cake pan to evaporate some of the extra liquid. Great over cream cheese, strawberry cream cheese, and my favorite - Port Salut cheese with a crunchy baguette.

Twice Baked Sweet Potatoes with Ricotta Cheese

These are delicious when done just right. The first time I made them they were great, the second time I had different sweet potatoes and they ended up over cooked - by the time there were twice baked they were just mush!! I'll def make them again though.

Creamy Veggie Fondue

This was voted "best fondue" at our last fondue night. I didn't have monterey so I used Bergenost - I think it made it even better! Omitted the green onions for the same reason, and added Parmesan and garlic powder for extra flavor. I agree with the other reviewers - MILK LAST!! And toss any freshly-grated cheese in a tablespoon of flour to help thicken the fondue without making it lumpy. Thanks Al for the great recipe! Couldn't have impressed without you!

Cake Balls

Like a lot of reviewers said... these are *very* time consuming!! They would be a great project for small children, though. I rolled the balls and refrigerated overnight (i'm sure a few hours would have been fine). The coating part was what was so time consuming! But the family loved them, especially the boys and especially the vanilla. I may make them again but not for a while!

Roasted Red Pepper Cream Sauce

Really loved it!! Followed the recipe as written, came out really nice and served with gnocci. Did take a really long time though, next time I will definitely make a double batch and freeze half.
