Orange Herb Roasted Chicken

This was very tender and moist! I cut the amount of butter way back to 1/4 c. total. I put 2 Tbs. cut in pieces under the skin and drizzled another 2 Tbs. over chicken before roasting. The left over meat I used to make a chicken pie. Will be making this again.

Beef Pot Pie III

This was a delicious beef pie. I had leftover pot roast and au jus that I put to use instead of the sirloin steak and canned beef broth. And since there are only 2 of us at home I cut the recipe in half, cooked it in a small casserole dish and only used a top crust. This is a real keeper for using up leftover roast beef.

Creamy Beef Stroganoff

My husband told me 3 times during dinner how good this was. I think that deserves 5 stars. I added onion and garlic to the beef when I cooked it. Other than that I followed the recipe.

Bread Pudding II

This makes a wonderfully sweet and creamy bread pudding. I used 4 cups of bread cubes from a crusty baguette. I also added 1 tsp. nutmeg and lightly sprinkled about 1/2 tsp. of sugar on top before baking. Really yummy.

Blueberry Crisp II

I thought this crumb topping was a good choice with blueberries as it is not as crunchy as some, like the one I use on my peach cobbler which has oatmeal in it. This recipe was liked by all who ate it and I will be making it again.

Rhubarb Cobbler

This was delicious. I followed the recipe exactly. I baked it in an 9" round baking dish. It was my first time cooking with rhubarb so I chopped it up pretty small just in case the flavor was a little disagreeable I wouldn't get a chunk of it. It turns out we really liked it! The dough/bread part is really light and sweet. I think I'll be using it with my other cobblers.

Grandma Gudgel's Black Bottom Cupcakes

These are delicious! The cupcake was moist and the cream cheese filling was just right although the recipe makes way too much of it. I will probably cut the cream cheese recipe in half the next time I make these.

Old Fashioned Mac and Cheese

This is a very good, grown-up mac 'n cheese! Good-bye boxed stuff. I cut the recipe in half since there are only two of us. I followed the recipe ingredients however I need more flour to make a paste for the white sauce. I also did a short cut and added the onion, salt, pepper and cheeses to the white sauce and then added the elbow macaroni; mixed it all together and baked for 30 min. Yumm.

White Cheese Chicken Lasagna

I used Paul Newman's Alfredo sauce and no-cook noodles to cut down on the prep time and it turned out delicious. At dinner I told my husband that I thought this was good and he responded, "it's very good." That makes it a keeper.

English Muffins

These turned out really good, which surprises me because I made a couple of errors. I misread the instruction and activated the yeast in only 1/4 c. water. Then, when adding the extra flour the dough became so dry (I only added 1.25 cups) that I began kneading and forgot to add the salt! So I kneaded in the salt and said, "Que sera, que sera." Well the dough rose just fine and I continued on with the instruction. I only got 11 muffins but hey, I'm happy with that. I'll be trying this recipe again. And maybe it's better that I not try cooking at 6 in the morning!

Ruth's Grandma's Pie Crust

I used this recipe in making Blueberry Pie I, and it was delicious. I mixed the egg with only 1/4 cup water (suggested by another reviewer) and it made the dough plenty moist. I used some leftover for a beef pot pie. The flakiness was great but it was probably a bit sweet for a meat pie.

Blackberry Pie I

This pie is very good! I used frozen berries and added a TBS of chopped cold butter before putting on the top crust and the filling was not runny at all. After brushing some milk on the crust I only sprinkled about 1 1/2 tsp. of sugar on top. I cut the recipe in half and prepared it in a small 4 serving glass pie plate and it was just right for dessert for a couple of night for hubby and I. I also prepared Ruth's Grandma's Pie Crust and it was superb.

Chef John's Caramel Apple Pie

We really liked the flavor but I didn't care for how watery the filling was. I served it with vanilla ice cream and poured some of the filling over the ice cream. I've read through the reviews and next time I will add less water to the caramel sauce; cook the caramel sauce a few minutes for evaporation of liquids; completely cool the caramel sauce and toss the apple wedges in 3 tablespoons of corn starch or flour. Hopefully it will then be a 5 star pie.

Apple Walnut Salad with Cranberry Vinaigrette

This salad is wonderfully easy to put together. I served it with a homemade turkey pot pie and they went well together. I left the dressing a little chunky. It was more appealing visually and it was nice to get an occasional bit of cranberry.

Beaker's Vegetable Barley Soup

We liked this for a think soup. I cut the recipe in half, except for the tomatoes, and I used chicken broth and threw in the shredded breast meat of some left over chicken. It was a simple "meal-in-a-pot" dinner.

Mom's Best Pork Chops

I made this tonight and we enjoyed the flavor. I followed some of the reviews and added seasoning to the crushed crackers rather than with the egg. My chops were a little thicker than the "thin cut" that I usually get so I cooked them in the oven for 30 min. and they still came out a bit dry. Next time I'll check them after about 20 min.
