Gourmet Chicken Pizza

This was my first time making homemade pizza and it was a flop. Mostly because the crust burned. After I put the crust in the oven to bake (the second time) I suspected I would have a problem when I compared the cooking time of the pizza crust on the package (13 - 17 min.) and that required in the recipe (27 - 32 min. total). I had to take it out of the oven as soon as the cheese melted rather than when it was "melted and bubbly". Should I have baked it on the top rack (gas oven)? Overall the flavor was OK and I might make it again for a Friday night quick meal if I can learn how to save the crust.

Orange Herb Roasted Chicken

This was very tender and moist! I cut the amount of butter way back to 1/4 c. total. I put 2 Tbs. cut in pieces under the skin and drizzled another 2 Tbs. over chicken before roasting. The left over meat I used to make a chicken pie. Will be making this again.

White Cheese Chicken Lasagna

I used Paul Newman's Alfredo sauce and no-cook noodles to cut down on the prep time and it turned out delicious. At dinner I told my husband that I thought this was good and he responded, "it's very good." That makes it a keeper.

Easy Lovely Lemon Chicken

I'm giving this 2 stars for tenderness but the flavor was nothing worth making this again. I used boneless, skinless chicken breasts and covered for 45 min. (they were partially frozen) then uncovered for about 10 min. They sliced wonderfully. Maybe if I'd thickened the juices to make a sauce it would have been better.

Lemon Thyme Rice

I did not find the flavor of this dish appetizing at all. Also, using only 14.5 oz. of liquid leaves the rice firm and the thyme (I used only 1 tsp. dried) overwhelmed any lemon flavor.

English Muffins

These turned out really good, which surprises me because I made a couple of errors. I misread the instruction and activated the yeast in only 1/4 c. water. Then, when adding the extra flour the dough became so dry (I only added 1.25 cups) that I began kneading and forgot to add the salt! So I kneaded in the salt and said, "Que sera, que sera." Well the dough rose just fine and I continued on with the instruction. I only got 11 muffins but hey, I'm happy with that. I'll be trying this recipe again. And maybe it's better that I not try cooking at 6 in the morning!

Prego® Now and Later Baked Ziti

We enjoyed this easy dish. I used "Traditional" Prego sauce and doctored it up a bit with oregano and basil. Hubby likes "casserole" type dishes and its nice that we have a second dinner waiting for us in the fridge!

Apple Walnut Salad with Cranberry Vinaigrette

This salad is wonderfully easy to put together. I served it with a homemade turkey pot pie and they went well together. I left the dressing a little chunky. It was more appealing visually and it was nice to get an occasional bit of cranberry.

Chicken Pot Pie II

Very much enjoyed this pie. I had left-over turkey from our holiday meal so I substituted that for the chicken. I also cut the recipe in half, using only one potato. But this wound up being a little to dry so I added 1/2 c. more broth to 1/2 TBS. flour and added it to the turkey and vegetable mix. This recipe will be one of my repeats!
