Ruth's Grandma's Pie Crust

I used this recipe in making Blueberry Pie I, and it was delicious. I mixed the egg with only 1/4 cup water (suggested by another reviewer) and it made the dough plenty moist. I used some leftover for a beef pot pie. The flakiness was great but it was probably a bit sweet for a meat pie.

Blackberry Pie I

This pie is very good! I used frozen berries and added a TBS of chopped cold butter before putting on the top crust and the filling was not runny at all. After brushing some milk on the crust I only sprinkled about 1 1/2 tsp. of sugar on top. I cut the recipe in half and prepared it in a small 4 serving glass pie plate and it was just right for dessert for a couple of night for hubby and I. I also prepared Ruth's Grandma's Pie Crust and it was superb.

Lemon Cupcakes

The cupcakes came out flat and spread on the cupcake tin. I used the self-rising flour. That too was a mistake. I should have just used all-purpose with some baking soda. Then, following the icing directions, which certainly aren't difficult, my icing separated. My first thought was that 5 minutes was way too long but then I had never made cream icing before so I told myself to just follow the directions. I think I'll just by some from the store and call it quits. I made some chocolate cupcakes before this batch and they came out wonderful. So I give the cupcakes 3 stars because the flavor is good even if the appearance isn't, and the icing 1 star.

Beef Pot Pie III

This was a delicious beef pie. I had leftover pot roast and au jus that I put to use instead of the sirloin steak and canned beef broth. And since there are only 2 of us at home I cut the recipe in half, cooked it in a small casserole dish and only used a top crust. This is a real keeper for using up leftover roast beef.

Beaker's Vegetable Barley Soup

We liked this for a think soup. I cut the recipe in half, except for the tomatoes, and I used chicken broth and threw in the shredded breast meat of some left over chicken. It was a simple "meal-in-a-pot" dinner.

Chef John's Caramel Apple Pie

We really liked the flavor but I didn't care for how watery the filling was. I served it with vanilla ice cream and poured some of the filling over the ice cream. I've read through the reviews and next time I will add less water to the caramel sauce; cook the caramel sauce a few minutes for evaporation of liquids; completely cool the caramel sauce and toss the apple wedges in 3 tablespoons of corn starch or flour. Hopefully it will then be a 5 star pie.

Iced Pumpkin Cookies

I made these tonight and they were good. I liked them better a couple of hours after they cooled and with the frosting spread on them. They don't have as much pumpkin flavor as I expected so I'll try a couple other recipes.

Blueberry Pie

My mistake for not reading a few reviews before making this pie. The flavor is delicious but the filling is very soupy. I love blueberries so I know I will give this another try using a method of thickening it up. Also, I added 5 cups of fresh blueberries because only 4 cups looked like it would produce a sunken looking pie. At least all the extra juice can be poured over the vanilla ice cream that I serve with the pie! :)

Creamy Beef Stroganoff

My husband told me 3 times during dinner how good this was. I think that deserves 5 stars. I added onion and garlic to the beef when I cooked it. Other than that I followed the recipe.

Chicken Fried Steak

Bread Pudding II

This makes a wonderfully sweet and creamy bread pudding. I used 4 cups of bread cubes from a crusty baguette. I also added 1 tsp. nutmeg and lightly sprinkled about 1/2 tsp. of sugar on top before baking. Really yummy.

Blueberry Crisp II

I thought this crumb topping was a good choice with blueberries as it is not as crunchy as some, like the one I use on my peach cobbler which has oatmeal in it. This recipe was liked by all who ate it and I will be making it again.

Rhubarb Cobbler

This was delicious. I followed the recipe exactly. I baked it in an 9" round baking dish. It was my first time cooking with rhubarb so I chopped it up pretty small just in case the flavor was a little disagreeable I wouldn't get a chunk of it. It turns out we really liked it! The dough/bread part is really light and sweet. I think I'll be using it with my other cobblers.

Grandma Gudgel's Black Bottom Cupcakes

These are delicious! The cupcake was moist and the cream cheese filling was just right although the recipe makes way too much of it. I will probably cut the cream cheese recipe in half the next time I make these.

Red Velvet Cupcakes

Made these today for a weekend gathering. A bit messy to make and unfortunately the all crowns fell before the cupcakes were done. :( They turned out very moist though. I thought the frosting was too sweet and the powdered sugar overwhelmed the cream cheese flavor even though I used only about 13 oz. of the sugar. Probably won't make these again.

Impossible French Apple Pie

This pie doesn't really come out like a pie. It is more like an apple bread pudding or something along that line. The ingredients made enough to fill one 9" pie dish and one of my 6" pie dishes. The presentation is so-so but the flavor is good. I will continue to look for a better french apple pie recipe.

Easy Honey Mustard Mozzarella Chicken

These were just OK to us, nothing to rave about. The flavor of the sauce did not carry over into the chicken. Maybe if I marinaded them for a few hours first? I cut the recipe in half since it's just the two of us. I forgot the lemon pepper but I know that was not a make or break ingredient. With so many recipes that we do like I doubt I will give this one a second chance.

Old Fashioned Mac and Cheese

This is a very good, grown-up mac 'n cheese! Good-bye boxed stuff. I cut the recipe in half since there are only two of us. I followed the recipe ingredients however I need more flour to make a paste for the white sauce. I also did a short cut and added the onion, salt, pepper and cheeses to the white sauce and then added the elbow macaroni; mixed it all together and baked for 30 min. Yumm.

Mom's Best Pork Chops

I made this tonight and we enjoyed the flavor. I followed some of the reviews and added seasoning to the crushed crackers rather than with the egg. My chops were a little thicker than the "thin cut" that I usually get so I cooked them in the oven for 30 min. and they still came out a bit dry. Next time I'll check them after about 20 min.

Chicken In Basil Cream

This was a delicious and simple recipe. I left out the pimento since we're not big fans of that flavor. In hindsight I wish I had heeded the reviewers who recommended doubling the sauce. I will definitely be making this again.
