Best Brownies

Perfect! I love a brownie that is neither cakey nor fudgey, and this was it. I used stone ground whole wheat flour and evaporated cane sugar, and I skipped out on the frosting. And, I made sure not to over mix or overbake and to lightly beat the eggs first. My husband enjoyed it, which is awesome given that he was not even excited about the brownie dessert option. Thanks!

Spicy Vegan Potato Curry

I really enjoyed this dish! I followed the directions with the following exceptions: i didn't measure the salt/spike or cayenne i used; i used red potatoes (6 cups diced/about 15 small ones), small red onion, light coconut milk, 3 tbsp olive oil, and crushed tomatoes. It produced 11 servings, each one with 257 calories, 6 grams fat, 8 grams protein, and 5 grams fiber. thanks!

Carrot Rice Nut Burger

my husband and i enjoyed this recipe. i had to change the specs, though, because i didn't need 20 patties. i used 2 cups of cooked rice leftover from a lebanese dish we had bought, 1/2 cup cashews, 1/4c sunflower seeds, 1/4 medium onion, and about 12 baby carrots (abt 5 oz.) i followed the directions as given and put the 4 1/2 patties on my george foreman grill. i think next time, i would just add more onions and salt. overall, great alternative to the bean and meat burgers. thanks!

Instant Rolls

awesome! i used regular flour, 2t baking soda like one reviewer suggested along with a sprinkle of salt and some cheese. i only used maybe1 tablespoon of sugar because i didn't want sweet bread and used heaping regular spoonfuls of mayo. very light and fluffy...thanks!

Roasted Vegetables

i took some liberties with this otherwise great recipe. i would up the vinegar to 1/4c; i didn't have any squash, so i ended up using 4 small sweet potatoes, a bag of frozen cauliflower/broccoli/carrot mix, 4 oz. (wt.) mushrooms, 1/2 medium red onion. i didn't use any fresh seasonings because I didn't have any, but i used what i had (incl. savory and parsley and spike). was a little burnt in places, but i thought it added character. i wish it were a bit crunchier, maybe it wasn't because of the extra vinegar. but, i liked the flavor of teh vinegar. thanks!

Beth's Spicy Oatmeal Raisin Cookies

it's a really good recipe, and thanks to Beth for putting her own spin on it and sharing it with us! loved it...i halved the recipe so we wouldn't pig out...then, i subbed whole wheat flour (of course) and used pumpkin pie spice instead of the cloves (only bc i didn't have any...doubled the amount). i did use a tbsp or 2 of whole milk to moisten up the batter a bit and added 1/4c walnuts. truly heavenly cookies! best oatmeal cookies i've ever tasted!!!

Mom's Zucchini Bread

i like this recipe and would make it again. i used whole wheat flour, abt 3 c zucchini, 2 c walnuts, and i thought the sweetness was fine. i was going to drain the zucchini, but i followed the reviews that suggested not to. glad i didn't. it made 1 loaf (60m) and 12 muffins (33m). the loaf was moister than the muffins. so, the loaf would get the 5 stars, and the muffin the 4 stars. i still like the muffins for an on-the-go treat, though.

Lime-Curry Tofu Stir-Fry

I thought this meal was tangy and tasty. I wanted to use tofu, but my husband nixed that idea. So, I used chicken tenderloins. I also used grapeseed oil, dried ginger, and honey (instead of syrup). I forgot basil, and I didn't want the red bell pepper. I mixed all the liquids minus the coconut milk first before adding to the mixture. oh, and i used frozen vegetables not zucchini. i apologize for not using the recipe as it was presented - i can't stand when people do that! but it definitely did inspire me. thanks!

Quick and Easy Cheese Bread

i put savory, coriander, and marjoram (i think) and used 1 cup of yogurt instead of milk. i used whole wheat flour, too. i really liked this with italian cheese mix and a little sharp cheese. i might prefer butter to olive oil, but hubby liked the taste of it. thanks!

Simple Spinach Lasagna

I picked the first spinach lasagna with cottage cheese that I saw, and after making it and comparing it to others, I still think it's better than those. Here's what I subbed or added: plain tomato sauce for the spaghetti sauce; I used 1 pkg frozen spinach, about 4 cups of fresh spinach, about 6 oz. fresh sliced mushrooms, and 1 carrot. We all loved this recipe along with the "quick cheesy bread" recipe on this site.

Baked French Fries I

i've enjoyed this recipe alot. i change my seasonings all the time, though. I've followed others' suggestions - putting the ingredients in a plastic bag and tossing the fries in it and turning the fries after 20 minutes or so. great, thanks!

Zucchini Patties

I love the concept of this recipe. I used sharp cheddar and an italian cheese blend (because I don't like parmesan too much), and I wonder if that made it too oily. Next time, I will probably use the parmesan and/or use Pam or bake it. I also added mushrooms and additional seasoning to add flavor.

Easy Batter Fruit Cobbler

i liked this recipe! it was cakey, but i expected it to be that way after the last cobbler recipe i tried. i guess i significantly made substitutions - whole wheat flour, fresh sliced strawberries and blue berries, and soy milk. i doubled the recipe, too. it was great - sweet enough for me (my hub enjoyed it, too, but he would have liked it a bit sweeter). this was uncomplicated and scrumptious. i'll be making this again!

Coconut Macaroons

i liked this recipe because it's easy. i tried the suggestion of adding 1/2 c flour, and that was fine. there was a slight funny taste, but i don't know why. i might try it again without the flour and see what happens. my macaroons were a little big, so i'll just do small spoonfuls next time. thanks!
