About this Cook
I'm a mom of a picky eater and a dairy- and oat-allergic child. I'm a pro at translating milk-including recipes to something we can all eat, and I love cooking with fresh, less processed foods. Bonus: it saves money!
My favorite things to cook
Pasta, fish, and chicken! Any variety therein works for me.
My favorite family cooking traditions
German greta and bread pudding on Christmas morning are a thing. Greta has been in our family for at least 4 generations, and this will be my first Christmas making it myself. Bread pudding started 4 years ago with my oldest because we had eggs, stale bread, and milk in the house, and that was it. Now, we all make it together!
My cooking triumphs
Conquering dairy-free cooking! (And keeping one man's man, one picky eater, and one newbie eater happy at the same time.)
My cooking tragedies
Chicken fried steak. It died a terrible, terrible, chewy death.... And the husband still ate it all! (Not because he liked it, mind, but to save my crushed feelings.)

Bread Pudding II
I found this recipe three years ago and used it to start a Christmas tradition with my son. We didn't have a lot of money, so it was perfect! Stale bread, milk, eggs? I have all that! And, it was something an 18 month old could do. We make it every year now, and even my husband (who wasn't entirely sold on the dessert-as-breakfast sweetness) is now asking for it. The only changes I usually make are to add a little extra cinnamon and maybe some nutmeg. :) Thanks for such a fabulous recipe!

Green Smoothie
Phenomenal! At first, I was wary of eating kale in a smoothie, since I work at a gym whose veggie boosts in their shakes leave a distinct taste. This, though, tastes great! I had to improvise because I didn't have all the ingredients, so it ended up being kale, about a cup of frozen peaches, about a cup of milk, 2/3 of a banana, and a scoop of protein powder. Delicious! Even my husband liked i, and in our house he's the picky one.

Gina's Lemon Pepper Chicken
This was amazing! My fiance's trying to get in shape for bootcamp, so I decided to give it a try. It was absolutely perfect. The chicken literally melted in your mouth. It was even soft enough for my baby to eat. My fiance is still raving about it, and I will definitely be making this again.
