Six Can Chicken Tortilla Soup

So good it is addicting. The perfect spice-level which is hard to do. We also added garlic because we are garlic fanatics. Make a double batch because it is also great leftover.

Roasted Garlic Mashed Potatoes

These are to die for. We made them one night and ended up having them three times in one week. We recommend adding the tiniest bit of garlic salt to the recipe. Yum!

Creme Brulee French Toast

This is delicious- we are both creme brulee lovers and french toast enthusiasts, so we very much enjoyed this. The one caveat is not to let it sit too long- it is very easy for it to get soggy. But served fresh and hot it makes a wonderful special occasion brunch.

Potato Rosemary Rolls

It's hard to get too excited about rolls usually, but these were delicious. The texture was perfect and we even used them to tempt an Atkins-dieter! Ha ha ha ha ha. We will definitely make these again.

These were okay, but not very cookie-like. More like good lumps of pumpkin bread. I thought we followed the recipe exactly, but it would seem something went wrong.

Shrimp Scampi Bake

This is so good it is almost painful to eat. It can be difficult not to overcook the shrimp, but, done correctly, this recipe is incredible. Serve with bread, broccoli, and champagne like we did and it is a meal to remember.

Just another review to say we loved it! The leftovers were even better than right out of the oven. As others have said, it is easy to lower the fat content of this recipe- we used ground turkey and it turned out delicious!

Albondigas Soup I

This is so good. We loved it. It makes enough for leftovers and the leftovers are just as good as the first day! For a lower fat version, we substituted turkey sausage for the pork and ground turkey for the beef. Even the broth was wonderful. Next time, we will serve it with cornbread.

Bread Pudding II

Craving bread pudding, there were a zillion recipes, but so many were overwhelming (hot water bath, etc.) I was so excited to find this one which was so easy and got great reviews. It was perfect! Exactly what I wanted.

Savory Southwestern Crepes

Taste is sensational (but be prepared to spend some time.) They were sticky, even on the wax paper! But, truly the best crepes I have ever tasted. (By the way, we used turkey sausage for a healthier dish.)

Peanut Butter Vegetable Chicken Soup

Wow! This is SO good! Even the broth is so delicious, which is unusual for a soup. Next time, we'll try it in the slow cooker and add peanuts (though we used crunchy peanut butter and those little bits of crunch were great!) Try this soup! Suspend disbelief!
