Shortly, I just made them healthier, specially for kids and they turned out wonderfully, as usual! Here what I did: instead of butter I used applesauce, white sugar - unrefined brown sugar, all-purpose flour - unbleached flour, plus 2 Tbl. spoon wheat germ, 1 Tbl. spoon chocolate sprinkles and 2 tsp. rainbow sprinkles(to attract kids-what worked very good!)plus additional to all that 2 Tbl. spoon canola oil. I skipped crumb and instead I sprinkled unbaked muffins with rainbow sprinkles. Recipe yield 16 normal size muffins. They look very attractive even for adults, taste wonderful. If you have small kids under 4, try it and believe it works with fussy eaters, just like the ones I have!
