Cocoa-Coffee Spiced Chicken with Salsa Mole

Yum! This was the best chicken recipe I've done. My husband is pretty picky and he loved it! I didn't have all the salsa ingredients, so I just added salsa I had on hand and it was great. It wasn't really chocolatey just in case people worry it'll taste weird, especially without the chocolate chips. Very good!

Sweet Marie Bars

Most desserts aren't too sweet for me, and this one almost was! It was way too sweet for my husband. I used different cereal I had on hand and it worked out fine.

Roasted Acorn Squash

This is very tasty! I added cinnamon and used molasses instead of brown sugar and it turned out great. It was a bit dry, maybe it needs a bit more oil or butter. I'll make it again. Thank you.

Vegetarian Split Pea Soup

This soup tasted pretty good, but I would leave the pasta out next time. It was really thick. I pureed most of it and I might puree less of it next time.

Chili Casserole

I use rice instead of pasta and it's easy and tastey and a bit healthier. My husband loves it with guacamole on top.

Black Bean Soup I

We're vegetarian and made this soup vegetarian by leaving out the ham and using vegetable broth. My husband tasted and asked, "Where'd you get the "hambone"?!" I used about 2 teaspoons of barbeque sauce and it was great! Quicker if you use a pressure cooker.
