Roasted Swiss Chard with Feta

Reviewed: Apr. 23, 2013
Fantastic dish! My husband was dubious and announced he wouldn't be having the chard dish. He then ate half the pan! I used the leftover to make a quiche the next day and it was wonderful. (quiche with 2 eggs and 2/3 of a small 35% cream container)

Brown Sugar Meatloaf

Reviewed: Oct. 20, 2011
I followed the amended recipe given by H2OSMILES who helpfully compiled what others had suggested. I thought it was moist and tasty. But too sweet. Even when reduced to 1/4 cup, the sugar overpowered the tomato in the glaze. Next time, I'll try these modifications: In the ketchup glaze, 1/8 cup of brown sugar with a tablespoon of Worcestershire sauce and a dash of cayenne pepper and black pepper (the glaze really needs something to balance the sweetness). In the meatloaf: 1/2 cup of milk and 1 egg, 2 cloves of garlic to the meat mixture and 2 tablespoons of chopped celery, the onion, 1 cup of seasoned bread crumbs instead of the crackers. I think I'll add more ginger because I couldn't really taste it with 1/4 teaspoon. Next time I will try with the glaze on top from the start.

loved this recipe with the modified, grilled fish rather than fried.

Tzatziki Sauce II

Reviewed: Nov. 25, 2010
The instructions are good for the yogurt and the cucumber etc. However, I thought the vinegar was too strong. I had to add yogurt to reduce the pungent taste of the vinegar.

Souvlaki

Reviewed: Nov. 25, 2010
Fantastic! Moist and tender meat, full of flavor. I made it with red peppers, which were lovely. I added a little more garlic and oregano, because I like extra flavour. Delicious!

After-Thanksgiving Turkey Soup

Reviewed: Jan. 19, 2010
Wonderful flavorful, but quite rich. I followed a lot of previous suggestions, cutting some of the cream with light cream, adding a variety of rices and even put in some barley. I also cooked the broth with a bouquet garni of herbs.

Turkey Pot Pie I

Reviewed: Jan. 19, 2010
My family liked the pies, but I thought they were a little bland. Also a little dry. I wonder if the potatoes soak up the saucy filling. I incorporated some of the advice from previous reviews (waiting for filling to cool). I had added some peas and used my homemade turkey broth - which should have given good taste. I think I would add more spices (bay leaf, a little garlic) next time and cut the potatoes (or use only half).
