Roasted Swiss Chard with Feta
Fantastic dish! My husband was dubious and announced he wouldn't be having the chard dish. He then ate half the pan! I used the leftover to make a quiche the next day and it was wonderful. (quiche with 2 eggs and 2/3 of a small 35% cream container)

Brown Sugar Meatloaf
I followed the amended recipe given by H2OSMILES who helpfully compiled what others had suggested. I thought it was moist and tasty. But too sweet. Even when reduced to 1/4 cup, the sugar overpowered the tomato in the glaze. Next time, I'll try these modifications: In the ketchup glaze, 1/8 cup of brown sugar with a tablespoon of Worcestershire sauce and a dash of cayenne pepper and black pepper (the glaze really needs something to balance the sweetness). In the meatloaf: 1/2 cup of milk and 1 egg, 2 cloves of garlic to the meat mixture and 2 tablespoons of chopped celery, the onion, 1 cup of seasoned bread crumbs instead of the crackers. I think I'll add more ginger because I couldn't really taste it with 1/4 teaspoon. Next time I will try with the glaze on top from the start.
