Penne with Chicken and Asparagus

Great recipe! I sauteed mushrooms with the chicken as suggested. When I went to the store, they didn't have any asparagus so I substituted with 2 cups of frozen green beans (defrosted). I prepared them the same as I would've the asparagus. While the green beans were in the skillet, I opted for 2 cloves of garlic rather than the garlic powder. I used grated Parmesan cheese in the amount called for but I also used 1 cup of a finely grated white cheese that I had on hand. The result was amazing! I loved it and so did my guests. I will definitely make it again.... and probably with the same adjustments that I used this time.

Chicken Scampi II

This recipe has become has staple for me, especially when serving guests. I cube my chicken and always add bell peppers (a mixture of green, red, orange or yellow), mushrooms, and a small onion. I also add a little more garlic than called for because of personal preference. If I have green onions on hand, I also throw them in there for added color. Really delicious and great served over pasta!

Cinnamon Honey Butter

Like many other reviewers noted, it was much too sweet. Overall though, the taste was good. I want to try it again but next time with more butter and much less sugar. The honey I used was already very sweet. It seems that the result of this recipe is highly dependent on the honey used.

BBQ Chicken Calzones

Delicious! This recipe was easy to make but a bit labor intensive. It took me twice as long (if not more) to make than the time called for. I used more bacon than called for just because I had it. I also added mushrooms, a couple cloves of garlic, and went ahead and used the whole small onion. Really delicious!

Fluffy Whole Wheat Biscuits

Carrots and Rice

Make no mistake, this is rice pudding with carrots in it. The taste was fine actually, but as several other reviewers commented, the result was very "weird". The name is very misleading. This recipe is much more about the rice than the carrots. I'm not sure whether to eat this as a dessert or as a side dish. I am really surprised that this recipe still has such high ratings. If you make this recipe, consider it a variation of rice pudding with carrots and onion added as opposed to the more traditional raisins.

Russian Tomato Salad

It was certainly a quick and easy salad, but the taste was overpowered with onion and pepper. I used 3 tomatoes instead of 2 because the ones I had were small, however, the tomatoes were barely noticeable with such great quantities of green pepper and onion. I will try this salad again, but will likely double the amount of tomatoes, cut the portion of onions in half, and probably use just 2 peppers. As a side note, I served this salad at a party and the sour cream did not hold up well without being refrigerated for several hours. It became more runny the longer it sat on the table. Living in Russia, however, I used Russian sour cream (smetana) and it is a bit different than American sour cream.

Russian Salmon and Potato Salad

Absolutely wonderful! I live in Russia and served this for a party. It was the first salad to go! I used tuna instead of salmon. Our mayo comes in squeeze bags so it was easy to apply it in pretty spirals. I followed the advice of another reviewer and made more eggs. 5 was just enough for me to cover the top layer with thin slices. I also added salt & pepper to the potato layer as other reviewers suggested. For presentation purposes, I finely shredded a mild, white cheese and put it around the edge of my round dish.
