Spinach Quiche

I have made this recipe a few time now. The first time I cooked the recipe as is, which was fine except that I didn't like the crust very much. Later I took a note from a different recipe and layered the bottom of the crust with swiss cheese. This made all the difference in the world. I now make a lower cal version by reducing the butter and the amount of cheese (the swiss on the bottom makes up for this). I also use a combination of reduced and full fat cheeses.

Momma's Cornbread Dressing

I made my two cornbread loaves using Jiffy mix. For each loaf I added an extra egg, half a stick of melted butter, and 1/4 cup of sugar. Requires a slightly longer cooking time, but it is well worth it. Followed this dressing recipe pretty closely (except the boiled egg) and it was divine!

Mom's Macaroni and Cheese

I layered the pasta, cheese, and dots of butter (no melting) and poured the milk and seasoning over the top. I eyeballed the ingredients and used about twice as much cheese and probably a bit more milk too (with some egg added). I skipped the bread crumbs and just put more cheese on top. Delicious.

Easy Tuna Casserole

I doubled the tuna in this recipe and it was delicious. I also inadvertently used the fat free cream of chicken soup, but it seemed perfectly fine to me. Next time I will double the cream of chicken soup for a creamier dish. My boyfriend loved it too.

Roast Chicken with Rosemary

It's hard to resist the urge to modify this recipe, but I'm pretty confident it is delicious as is. I made three simple changes. I added whole garlic cloves to the cavity, seasoned salt and garlic powder to the outside of the bird, and a T of melted butter to give the bird an added crisp. Very good.
