Oma's Cottage Cheesecake
I followed the recipe with a few changes- no cinnamon in the crust, half the lemon juice, and added about 1/4 c. Cocoa powder as another reviewer did and half a block of no fat cream cheese I had leftover. If you omit all the lemon juice you lose the "cheesecakey" flavor and get a more puddingy result. The lemon gives it that tang and helps firm the cheesecake. My blender couldn't handle it so I used a bowl and an immersion hand blender. easy! It took about an hour and then I turned the oven off and left it cracked for about 15 minutes. It was firm, rich, and delicious- even my husband was amazed that cottage cheese could be so yummy! Fabulously Sweet Pear Cake
I love this basic recipe! I sliced and chopped the pears and soaked in the sugar about 15 minutes and left whole. I used about 2/3 of the sugar called for. I used self-rising four and omitted the salt and reduced the baking soda to 1 tsp. I added 1/2 c. Of apple juice and baked in a sugared Bundt pan for about 40-45 minutes. Gorgeous and delicious!

Broccoli With Lemon Almond Butter
The great thing about these recipes is that folks put them out there for critique and we get to tweak. I agree with reviewers. Half the lemon juice (I like the zest). Brown the almonds in 1 tsp. sugar in a saucepan then add the butter (you can reduce that, too, no more than half) and zest and toss with the cooked broccoli. Splash the lemon juice in at the end, bring quickly to temp., stirring, and serve. Thank you for the recipe- pretty picture.
