Garlic Prime Rib

Absolutely fantastic. A huge hit that everyone loved. Made a 5.2lb bone-in prine rib. Generously served 4 people. Only changes I did: 1 teaspoon o fresh thyme and 1 teaspoon of dried. Also made a jus with the fond and bits in the roasting pan while meat was resting. Jus was made with 1 teaspoon of flour and 1 cup of red wine, brought to simmer and reduced. Served with Yorkshire pudding, barbecued asparagus and salad. Delish! Extra notes: initial searing stage crucial to getting a nice crispy- ish exterior. Equation for initial bake at 500: 5 mins per pound exactly. This worked out perfectly. Also, covered meat in aluminium while resting so as not to allow to cool. This recipe is an absolute keeper and i will be making it again for sure!

Grilled Sea Bass

Really loved the combination of spices and the simplicity of this recipe. So easy and flavourful. Unfortunately, slightly overlooked the fish, which is why I am giving it 4 stars. I know had it cooked a little less, fish would have kept more moisture. Advice: keep your eyes on the fish. Cooks fast! I used a cast iron skillet on medium, and it got that gorgeous crispy brown colour ( and amazing flavouring). 2 minutes less each side would have been perfect. Will certainly try again soon. Delicious!

Mushroom Risotto

Made this for romantic Valentine's dinner. It was my first time making risotto and it was absolutely superb. Used skim milk and 5%, instead of the higher fat options above. Turned out perfect! My boyfriend loved it. Keeping this in my arsenal as a sure ire showstopper when I entertain. Try it, you will not regret it. I used some oyster mushrooms along with plain white sliced ones I had in the fridge. I now understand that with risotto, you really have to " keep your eye on it and keep stirring", for the duration of cooking. Coupled it with halibut steaks and sautéed kale and grilled peppers. Thank you for this delicious recipe.

Roasted Red Pepper Cream Sauce

First tasted this in a great restaurant. Thought I'd try it at home. Superb!!!! Had it wit big ricotta spinach stuffed ravioli. Not the lightest of meals, but for a pasta night .. Just beautiful. Can't wait to make for a gathering.. It's beautiful and delicious !! Served this with a cabbage slaw/arugula salad.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

This was absoutely mouth watering delicious! The combination of spicy ( the chili powder ) and sweet ( the apricot glaze) blends so nicely on the palate. If you are cooking for a crowd that does not like spicy food, I would tone back the chili powder. I, however, think it's perfect the way it is! Did not have a grill ( live in a condo ), so I seared it in a very hot pan for 2 mins, then cooked in the oven at 320 for 40 mins, then added glaze and cooked another 10. Went really nicely with a almond rice pilaf and brussel sprouts. This apricot glazed pork is an entertainment worthy main course. Melts in the mouth! FYI: I kept the pork loin in the fridge for about 5 hours, soaking in that amazing dry rub.

Shredded Brussels Sprouts

Absolutely Delicious! I shredded the brussel sprouts ( which took a while to do), but I love the light fluffy texture, so well worth the time. The smoky bacon flavour really added depth and interest to this dish! I still prefer "simple" brussels sprouts.. However, to all the brussel sprout haters at my Xmas dinner party, THEY LOVED THIS RECIPE! Very lovely accompaniement for a dinner party! Beware.. pine nuts burn quicly so you have to watch them constantly while browning them ;) Every thanksgiving, Christmas, they are requested by many and a real fan favourite!

Cranberry Sauce

SImple, orange adds a light zest and compliments craberris perfectly.. and absolutely LOVED by everyone, even the skeptics! Now a staple and Thanksgiving and Christmas.

Easy Meatloaf

I made this meatloaf and have to say.. absolutely delicious, moist, flavourful! A real crowd pleaser! Added Worcestershire sauce and doubled the sauce quantity! THe only downside is the higher fat content. I am a big fan of cooking " clean, nutritious and low fat", however, this is still getting 5 stars. A real treat once in a while!
