Soft Giant Pretzels

This is a great recipe - makes very yummy pretzels! I found the whole process a little fiddly and tricky to avoid pretzels falling apart after being in the baking soda solution, but found that making the twists smaller (as someone else said) and using a flat mesh "spoon" (like the ones used for removing food from deep fryers) to hold the pretzel in the water was the answer :) My sons wolfed these down within minutes and the verdict was "two thumbs up". Will definitely be making these again!

Hot Cross Buns I

These are easy, light and really yummy :) I put extra cinnamon and added a little clove, ginger and nutmeg (because we like our hot cross buns tasting of spice) and used sultanas instead of currants (none of my boys like currants lol). Will definitely be making a ton of these for Easter ;)

Cheddar Pull-Apart Bread

Easy Homemade Vanilla Ice Cream

SO easy and tastes so good that I made 4 batches in the same night and customised the flavours to make vanilla, rum raisin, cookies & cream and peppermint choc chip! This one is now going to be a regular feature in our house - even my 5yo can make it! :) We don't have an ice cream maker so I just froze the mixture in a tub with a lid and stirred it regularly to make sure it didn't crystallise.

White Bread I

I don't have a bread machine so I made the dough by hand and baked it in my oven - this bread is really light and tasty and my son has asked me to make it every day for his sandwiches :D

Easy Focaccia

This is the BEST focaccia - I made it tonight and it was devoured within minutes :D Very easy to make, tastes SO good and has the perfect focaccia texture. I sprinkled a little sea salt over the top of the bread before baking it and it was AMAZING. This one will be on my weekly bread-baking list from now on!!!

Favorite Old Fashioned Gingerbread

I doubled the spices in this because I like my gingerbread to have a bit of a kick, but other than that followed the recipe exactly and it turned out absolutely fantastic! Served it warm with vanilla ice cream and it disappeared REALLY fast. Definitely one that will be on regular rotation in this house!

Mother's Cinnamon Rolls

These are absolutely AWESOME!!! I had never made cinnamon rolls before and they were SO easy, and we couldn't wait for them to cool - ate them hot straight off the tray with the glaze and OMG...heaven. I will definitely be making these on a regular basis - they are so light and fluffy and just the right balance of cinnamon, sugar, and fruit. My sons all loved them, too, and even the one who hates cooking wanted to learn how to make them :D

Perfect Lemon Curd

OMG!!! This lemon curd is to die for - SO easy and quick, and tastes exactly like the curd my grandmother used to make. I have chickens and a lemon tree - now I know exactly what I will be doing with all the extra lemons and eggs I get!
