Delicious Ham and Potato Soup

Best soup ever, my daughter eats it for breakfast! We do cut back on the pepper a bit, and double the ham. Have skipped the celery, or used celery seed, and it is just as good.

Brandied Shrimp with Pasta

Yum! I put the shrimp (26/30 ct) in for just a few seconds before adding the onions and garlic; they cooked perfectly without that extra time. Didn't get much flame when I lit the brandy but I cut the recipe in half so maybe there just wasn't enough to flare up. Cut the butter in half and that was still plenty; will try reducing further next time. Just ate the leftovers for lunch, can't wait to make this again! So easy. As mentioned in another review, make sure all your prep work is done before you start because this goes really fast.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Wow, wow, wow. Just as written. Had to cut myself off, I am so full right now. Was worried about the amount of garlic, but it was perfect (although I no doubt have garlic breath right now). Even my extremely picky 10 year old liked it. Will be making this on a very regular basis.

Buffalo Chicken Dip

LOVE this recipe. I boil three large chicken breasts and then shred, so it is a lot more meat than the original recipe but it is really good that way. Also use the buffalo chicken hot sauce, and shred my own cheddar as suggested by others. Easiest to use an electric mixer to combine the cream cheese, ranch, and buffalo sauce. Throw the mixture in a crock pot to heat through and it is perfect! Many, many compliments.
