Red Velvet Cake I

Amazing. I inherited this recipe from my husband's family, and like many others, found it really dry and a bit bland. I was happy to find others with the same opinion and simple solutions. I re-made the cake a week later with this recipe and all loved it. I think we're just not accustomed to the flavor of Crisco (which my original recipe called for instead of the vegetable oil; I used canola oil) in a cake. I liked it with more cocoa (2-3 tbsp) and less red color. Great tweaks to a lovely recipe! Still very puttery but worth it in the end.

Guacamole

Great! I made this without the tomatoes but everything else exactly as written. Very creamy and a big hit at a family dinner. I kept one pit in the bowl and it didn't turn brown.

Roasted Beet Wedges

Sooooo good! I made NO changes! And loved them! (ok, I just mixed the beets and the olive oil and salt in a bowl, not the plastic bag). And I did use rosemary - really tasty! Thanks!!

Veggie Lasagna Florentine

Ok, to be honest, I didn't eat this but I made it for my husband and he loved it! I also used precooked noodles, and fresh spinach (just added it to the cottage cheese) and fresh mushrooms. Also added 1 lb ground beef. A bit puttery but hubby loves it and it made a huuuuge pan, so he's happy for a while.

Vegetarian Refried Beans

Great recipe! I made it as written except no tomatoes. I guessed on the amount of beans (I had already been soaking them overnight when I found this recipe; oops!) so mine ended up pretty garlicky but very good. I took some out before putting through the blender and ate on brown rice pasta - really good, too. Thanks!

Whole Wheat and Honey Pizza Dough

Great recipe! We've made it twice. First time in 1 pizza but was too heavy. 2nd time split into 2 crusts, poked fork holes, let rise (not much happened in 8 mins) and baked 5 mins, then topped and baked for 13 mins. Yummo! Used suggested bake temp and ingredients.

Carrot Oatmeal Muffins

Awesome! I also left out the cream cheese and pineapple, added pumpkin pie spice, and used 1/2 c. of each white and brown sugars. Would normally subsititute for the oil, but didn't have applesauce on hand. Loved 'em!
