Banana Bread V

Outstanding (with a few minor tweaks). Changed out margarine for butter, used ½ cup brown & ½ cup white, and added ¼ tsp. vanilla. Bake time at 350 is about 50 minutes. It’s important to sift flour/baking powder & soda/salt together and fold into other combined ingredients. I also sprinkled the top with a combination of brown and raw sugar for an extra sweet tweet that sparkles.

Baked Pork Chops I

This was so delicious and tender. I actually didn’t have canned cream of mushroom so I made my own with some pork gravy seasoning thickened with flour, sautéed onions and baby bellas and left out the wine. I added heavy cream about 5 minutes before covering the pork with it. I also was short on time so after I sautéed the pork on both sides, I covered with foil and oven baked for 30 minutes, added the gravy mix and then covered and backed for another 20. They came out moist, tender and absolutely fabulous.

Beef and Mushroom Stuffed Peppers

I was happy to find a stuffed peppers recipe with ground beef and no tomato ingredient. This is a great basic recipe that stands beautifully on it’s own, or you can add as much of what you like to taste. My 2nd time making this I sautéed the onions and mushrooms first, added a 1/2 cup of uncooked 30 minute rice, some Italian bread crumbs, minced garlic and a pinch of cayenne pepper. I also didn’t blanch the peppers first and instead added a bit of water to the pan to steam a bit during cooking. Peppers came out al dente, which is the way we personally like them. Using small peppers makes for a very nice appetizer too!

Insanely Amazing Jalapeno Cheese Dip

Made this during the Christmas season for an appetizer gathering. Loved making it, loved testing it right out of the oven, loved displaying it, loved watching everyone gobble it down, loved feeling like a hero. I did cut the mayo in half and did the other half sour cream but that’s really all I changed. Fantastic.

Pork Chops Stuffed with Smoked Gouda and Bacon

Made these for dinner because I had extra Gouda and someone from the exchange recommended them. I did them in the oven on 350 for about 20 minutes and they were not only rib-stickin’ good to satisfy the hubby but the prep and presentation still made me feel gourmet. Next time I’ll definitely buy thicker ribs (they only had inch thick available) because it was difficult cutting the pocket. I’m looking forward to making them again
