I began cooking as a very small child helping my grandmother in the kitchen as she made pies and cookies and have loved doing it all my life.
My favorite things to cook
I love southern cooking, it feeds the soul and the body in a way most don't. It's the epitome of Comfort foods. I am also fond of cooking anything Italian or Mexican.
My favorite family cooking traditions
Christmas time I spend weeks making cookies, fudge, and toffee to share with neighbors and co-workers, they are always demolished and usually requests for recipes follow. Its the one holiday I happily spend a good week to two weeks preparing the food for no matter how many will be attending.
My cooking triumphs
Developing my own recipes that are requested every time family visits, things like my white chocolate cheesecake, creamy chicken enchiladas, and chicken and dumplings.
My cooking tragedies
When I was 9 I was to cook rice for our family meal, I asked my dad how much too cook and he said 1 serving per person. My mind translated that to 1 cup of uncooked rice per person, we had 5 people in our family. I filled every pot with rice by the time it was all cooked and was eating rice for breakfast for a long time.

Jalapeno Popper Spread
My family devoured this dip. I added bread crumbs and a bit of cheddar cheese, as well as the Parmesan cheese on top and baked in the oven until it was heated through. It was wonderful and passed the inspection of all my avid jalapeno popper fans!

Remarkable Fudge
I have made this fudge for years, and I have never had anything but rave reviews and repeat requests for more! I use this basic recipe to also make a peanut butter fudge, substitute peanut butter chips, as well as a white chocolate fudge (my mother's favorite) by substituting white chocolate chips. I have never used a double boiler when making it, and never had any problems with it, always smooth and creamy!
