Delicious Ham and Potato Soup

This soup is AWESOME! Really simple to make and so full of flavor. I substituted one leek for the onion and canadian bacon for the ham. Next time I think I'll try chicken broth instead of water. My difficult to please boyfriend kept saying - this is so good, this is so good - and we almost devoured the entire pot together! You cannot go wrong with this recipe!

Parmesan Chicken

This chicken was delish. I took other's recommendations and baked the chicken at 350 degrees for 30 minutes. It was perfect - so juicy and flavorful. Next time I might add more spices to the bread crumbs and melt butter to add to the breadcrumbs before breading the chicken, just to get a crispier coating. This is a keeper.

Paella I

This paella was very good and reminded me of what I had in Spain. I used brown rice however, and it took twice as long to cook so next time I'll use Arborio. The only things I changed were to add extra saffron (15 threads), 3/4 cup wine, and clams. Yum!

Turkey Pot Pie III

The flavors in this recipes are awesome. I did add potatoes, parsley, and carrots to the frozen veggies. I used phyllo dough like another reviewer recommended, and it did not work for me. I think the dough is too light for the rest of the pot pie mixture. Next time I'll use the pie crust instead! Excellent and easy recipe!

Butterscotch Gingerbread Cookies

A MUST TRY especially if you like gingerbread! This recipe is delicious, but was slightly too sugary (and I love sugar), so next time I'll only add between 1c - 1 1/4c of brown sugar, and 3/4 of the bag of morsels. I also substituted one stick of butter for applesauce to cut fat, and cooked at 330 degrees for ten minutes. Cookies came out perfect and chewy. My picky boyfriend said they were the best cookies I've ever made - he took a batch to work and they were gone within two hours.
