Waffles I
Excellent! My search for a waffle recipe ends here. I used 1/2 all purpose flour & 1/2 white wheat to make them healthier but still appealing to my kids. I also added the 1/2 tsp cinnamon & 1 tsp brown sugar that others suggested. Next time I might slip in some wheat bran or flax meal or even some ground walnuts for some extra nutrition.

Skewered Grilled Potatoes
This is excellent! My picky teen who doesn't like potatoes loved it! If you don't have time to marinade the potatoes for a full hour, I recommend saving the extra marinade (still do it as long as you can) to brush on the finished dish. Also, I added thickly sliced zucchini and thick onion slices. You could really be creative with this.

Peanut Butter Bars I
I saved time & $ by using whole graham crackers, crushing a little first in the package & then putting them in my food processor w/ the metal blade. I used 1 sleeve of graham crackers plus 3 whole crackers to get 2 cups of graham cracker crumbs. Then I pulsed in the food processor until all chunks were crushed into crumbs. I then added the rest of the base ingredients to the food processor and mixed the whole base using the pulse setting. Much easier & faster! I then chilled the base as others suggested & melted the chocolate chips & 4 TBSP peanut butter in the microwave, using 7 power for a minute and stirring after every minute until melted. Be careful not to over-melt or the chocolate will turn crumbly instead of smooth.
