Brazilian Black Bean Stew

a good stew. make sure to use spanish chorizo, not mexican, or else it'll disintegrate. i used more meat and less beans, because that's what was available. added paprika, comino, and black pepper to taste. i also replaced the water with broth. this one was a winner; good for a cold night!

Tuna Noodle Casserole from Scratch

pretty good tuna casserole, but definately add some herbs to the roux. i added a little bit of thyme, dill, marjoram, and plenty of parsley. also added chicken boullion as per another member's suggestion. added carrots and cut down the butter a little bit; i didn't miss it because the seasonings gave the casserole such a good flavor on their own.

White Chili with Ground Turkey

cut down on the broth because i don't like soupy chili. i was liberal with the spices (except cinnamon, which i cut down to 1/2 tsp.), and used butter beans because that was all i had. overall, it was pretty good, but needed more of a kick.

Whole Wheat Honey Bread

pretty darn good bread, considering it's entirely whole wheat. i made a variation on the original recipe by adding an egg, decreasing liquid slightly, using coconut oil for shortening (no trans fats), and adding 2 tsp. caraway seeds, 2 tsp. sesame seeds, 1 tsp. rubbed sage, and 1/2 tsp. ground nutmeg.

Coconut Pie

the filling came out kinda eggy-tasting. maybe the eggs were approaching expiration; i'm not really sure. maybe i'm just not that big on custard pies. everybody else seemed to like it, but i probably won't be making this again any time soon.

Easy Lemon Cookies

better-than-average cookies, but certainly not the best i've ever had. the powdered sugar kind of disappeared during the baking process, so i made a quick icing with powdered sugar, a little milk, and some lemon extract, and piped it onto the cookies. they look pretty and nobody'll guess they came from a box.

Mother's Ham Casserole

i took the salt down a little bit, but increased everything else a tad because i had more ham that i needed to use up. all i had was honey-glazed ham, but the sweetness worked well with the other flavors. i also used colby jack cheese instead of cheddar. very rich-tasting, but that's what made it so good.

Sweet Dinner Rolls

made these for christmas dinner and they really stole the show. simple to do, and they're deliciously fluffy. even though they're not biscuits, they'd also be great for breakfast with some sausage gravy!

made as is, and drizzled over chocolate cake. this is a great go-to glaze recipe because it's quick and can be done in the microwave without all the hassle of a double boiler.

Too Much Chocolate Cake

whoa. this was good. i'm usually wary about cake mixes, especially doctored ones, but this was wonderful. the sour cream gave it a little edge. i used a scant 1 cup of oil instead of the full amount, and it was still plenty moist. i dusted it with powdered sugar before drizzling chocolate glaze, in order to have some contrast. next time, i will try subbing strong coffee for the water, or just add some instant coffee granules.

Coconut Tofu Keema

this is the only way my family will eat tofu. try using ghee instead of olive oil for more authenticity. definately use more curry powder; i ended using almost 2 tbsp. i cut down the tomato sauce from 6 cups to a 6 oz. can, and that was all it needed, really. serve over basmati with some homemade naan, and you'll think you're in an indian restaurant; it's that good.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

fresh, simple flavors that work well together; i loved it. added garlic (you gots to have garlic!) and used the whole can of chickpeas because i didn't know what to do with the rest of the can. make sure not to overwilt the chard; if done right, it retains some texture. the colors of this dish are bright and made for attractive plating when paired with baked fish.

Budin (Puerto Rican Bread Pudding)

favorite bread pudding recipe ever. everybody in my family raves about it. you may need to make more caramel sauce than the original calls for; i always do. this recipe makes a lot, and i use two medium-sized, round casserole dishes to make two individual puddings. doing that makes the finished product look like a giant flan; it's really very pretty.

Sweet Potato Pie I

awesome thanksgiving dessert, with a few changes. try using 3/4 cup brown sugar instead of 1 cup white, evaporated milk instead of regular, and adding an extra egg for a better texture. i also doubled the spices, and added 1/2 tsp. each of ground ginger and ground cloves. the 2 tbsp. lemon juice suggested by other reviewers is a must; it really upped the flavor intensity.

Pork Chops for the Slow Cooker

this quickly became my family's favorite pork recipe (once i tweaked it a little bit). i used a 2-3 lb. pork loin roast instead of pork chops, because it tends to hold up a little better in the crock pot. i made more sauce by using 1/3 cup each of brown sugar and ketchup, adding about 1/4 cup honey, and reducing the soy sauce to 1/3 cup. it really is a big hit here.

Slow Cooker Chicken Mole

this was delicious with a few additions/changes. i upped the comino and cinnamon to 1 tsp. of each, and added 1/4 tsp. each of ground nutmeg and dried cilantro. try adding 1-2 tbsp. white sugar for a little sweetness to the sauce. i would definately recommend pureeing the sauce in a blender before adding to the crock pot with the chicken to make it smoother and thicker.
