Carrot Coconut Lime Soup
I only used 40.5 oz of coconut milk. Buying five cans of coconut milk seemed absurd, but three was reasonable. I didn't add anymore liquid to the soup and thought that all the flavors were very muted. I preferred it hot, my partner preferred it cold. If I were to make it again I would add a red bell pepper, more chili paste, more ginger, and less onion.

Jalapeno Popper Spread
I added bread crumbs, used only 1/2 cup of mayo and used 9 whole jalapenos canned (finely diced by hand). I baked the dip, then served in a crock-pot. I did use a lot of jalapenos. This was the perfect amount of spicy for me, but some guests thought it was too spicy. I would not suggest using a crock pot because the oil tends to separate rather quickly. While the dip still tastes really good the mouth feel and presentation are kind of gross. This is obviously from the constant heat. I think letting the dip sit over night would help to combine flavors a lot better. I probably wouldn't bother with breadcrumbs again. Pair with some sort of garlic chip/cracker/pretzel.

Cheese Dip with Beer
This was fantastic. I used Bell's Amber Ale; it gave a mild beer flavor which worked for the guests who weren't into beer. I also served in a crock-pot so ended up using a full bottle instead of the cup so it wouldn't get too thick. Substituted garlic salt for 4 cloves of roasted garlic. Served with pumpernickel points, garlic bagel chips, and french bread crostini. Can't wait to make it again!
