Pumpkin Soup

Yummy and simple. No cream needed! The pumpkin alone makes this seem thicker than I figured it would. I added cooked quinoa to itand it was a perfect consistency with that extra protein and filling-ness!

Hot Cranberry Tea

Yummy! I cut back on the sugar to 3/4 cup because I prefer a little more of the cranberry flavor to the super sweet. OTherwise it was perfect!

Cinnamon-Raisin Granola

Great flavor, but not clumpy enough and the bake time wasn't long enough (so I cooked it longer, but then it burnt the coconut. I say leave the coconut out until the last 5 mins, so it doesn't overcook. Add a touch of water or more sugar to the wet ingredients to help liquid cover more and therefore clump more.

Sweet Potato Enchiladas

Delicious! (esp if you like sweet potatoes). But they are flavored more like refried beans, Mexican style by the time you get this done. Half the poatoes and cream cheese and don't skimp on the seasonings (maybe double them for real mexican flav or. I didn'ty add the onions, but it would've tasted great with green chiles and fresh cilantro on top. You could even add a little rice and chicken inside too.

Slow Cooker Fruit, Nuts, and Spice Oatmeal

Not bad. I had to half the recipe. It does smell good in the morning! But VERY bland though. At the end I added some sugar, more cinnamon, and some milk. I'd also add a little extra water if you think you might need longer than 8 hours.

Pumpkin Pie Squares

Yummy, but I only added 1/2 c butter and reduced sugar by 1/3 c. The secnod time i did it, it wasn't that good. So maybe third time's a charm....we'll see.

Harvest Pork Stew

Normally love pork and apple stuff, but I didn't like this. The flavors didn't work for me. Granted, I didn't use sage. But, I did add lots of salt and a little sour cream to my bowl, and that helped a little.

Herbed Chicken Nuggets

Great crunch. Ok flavor. I halved the amt of chicken and eggs, but kept the seasons the same. Then used bran flakes (in place of bread crumbs, which was a little bran-tasting, but fine) and ground flax (in place of wheat germ). I tried a few with cornmeal too, which was lighter.

Rosemary Ranch Chicken Kabobs

Pretty good. I didn't have a grill though, so I cooked it in the juice on the stove. Doesn't need the salt. I forgot the lemon juice and didn't add the sugar.. but I think I should've used both. Cut down on the oil though.
