Old Fashioned Chicken and Dumplings

Yummy. I put 2 TB butter with 1/4 c. flour to make a roux. Then I added the chicken broth and chicken pieces. AFter 10 minutes, I added some steamed carrot pieces I'd had on hand. For the biscuits I added yogurt instead of milk and didn't cut in butter. Great.

Middle Eastern Rice with Black Beans and Chickpeas

It's ok. IT tastes similar to the Kitchari recipe I found on here. I used beef broth (half the amount) and added yogurt at the end. I also subbed curry powder for the coriander and tumeric. I think next time I'll only do 1/2 t of red pepper though...it was a little spicy for me (since I don't eat super spicy stuff much).

Corned Beef and Cabbage

I'm rating it a four because I didn't do the sugar, vinegar and bay leaf...which is probably what makes this different from all the other corned beef recipes. And I also didn't add the cabbage.

Pumpkin Pancakes

Scrumptious. We made it with 3/4 of the flour amt being wheat flour. We also used yogurt (in place of the milk and vinegar--which makes it buttermilk-ish). We also used honey instead of sugar. To top it all off...we just added butter on top, but my husband added cinnamon sugar syrup too. I enjoyed the fluffiness.

Turnip Casserole

Pretty good. I didn't add much sugar, but it definitely needed some. Maybe just 1/3 cup would be fine. I don't think the egg does much though, unless you do two. So either do two or none at all.

Zucchini and Potato Bake

Pretty good. I loved the crispy crunch of the bread crumbs. I broiled it all for 4 minutes after baking and used carrots instead of red pepper, since I didn't have any on hand. It was a little bland, but I used powder garlic. Next time I'll use real garlic and add real onions too maybe.

Baby Zucchini Salad

light and refreshing. I used tomatoes and thin stips of spinach. I never had raw yellow squash before and it was great with the little crunch. Next time I'll try the zucchini.

Italian Chicken and Chickpeas

Awesome idea! Way too tomato-tasting for me though. I actually added a mashed sweet potato and that helped. I only put in a dash of red pepper and that was plenty! Served with or without french bread. (sauce only served two people). Can top with parmesan and salt and pepper to taste. I also used fresh garlic, onion and celery--loved the celery crunch!

Banana Bran Muffins

pretty good. I only used 1 1/2 t each of both baking soda and baking powder. And used 3/4 cup honey with 1 c wheat and 1 c white. don't skimp at all on sugar. I also just added 1/2 c more banana instead of oil and did only 1/4 t. nutmeg. Tasted good and was plenty fluffy. yay.

Whole Wheat Ginger Snaps

They're not bad. I used maple syrup and added more cinnamon, which was fine, but they still tasted a little wheaty to me and were more thick, than chewy. I really wanted a nice chewiness to it, but didn't get that. Maybe it needs more butter or something?

Sour Cream Pork Chops

Absolutely amazing! We've never tasted such amazing porkchops before...so tender! The gravy didn't thicken up for me though (I used yogurt), but it tasted fine, so we just used it anyway. Next time I'll do the gravy on the stove instead.

French Bread

Great! I didn't do the glaze, and it was fine (since I didn't care about having the typical hard crust). I also didn't use cornmeal...just greased the pan with butter and it was fine. The second time I only used cornmeal and didn't grease, and it was fine and actually preferable.

Slow Cooker Pulled Pork

Simple and yummy. I just used the rootbeer and then I had pulled pork, cheese and spinach quesadillas and then added the bbq to some of the leftovers for garlic toasted sandwiches. Perfect.
