Shepherd's Pie VI

Delicious. I used turkey burger cooked in onions, garlic and celery and added a touch of salt, pepper, thyme and marjoram. I also added one roasted tomato (skin removed and mashed up).

Easy Chicken Fajita Soup

Pretty good. I used my own fajita seasoning spices: cumin, chilipowder, cayenne, garlic. The cooked peppers were a little bitter (maybe roast them in the oven first). Tastes like taco soup.

Chinese Lion's Head Soup

Yummy. A little too much ginger though. I used beef broth and put in about 10-12 cups water/broth liquid though because there was so much meat. I also added some asian noodles and used ground turkey.

Zucchini Apple Bread

It's ok. I actually didn't do apple, but used apple sauce instead of oil and 1 2/3 c of 100% whole cane sugar (rapudura) instead of the two sugars.

Roasted Beets 'n' Sweets

It's ok if you need to eat beets. I had steamed both beets and yamsduring the weeks, so I just baked 40 minutes and then broiled.

Beet and Cheddar Risotto

Excellent with a few modifications: brown rice (so I cooked an hour with 7 cups liquid, simmering one cup at a time), shredded beets/greens, and a touch of butter and lemon juice at the very end. Also, the cheese isn't needed at all, just put a little parmesan on top instead.

Ukrainian Red Borscht Soup

Super yummy! Baby loved it: blend it up or strain and give the soup juice in a cup with the veggies shreds on his tray. I didn't use meat, but used 1 t beef bullion. No sugar or tomato anything, except a squirt or two of ketchup (which is key). No garlic or garnishings needed either. Served withwarm crusty artisan bread.

It was ok. I used yogurt instead of mayo (not a mayo fan). I just didn't love the romaine with the other stuff (not my pref. but a good way to get kids to eat greens with fruit I guess).

Broccoli with Garlic Butter and Cashews

Yummy. I put the sauce below the steamer basket with strips of cooked beef and the steamed the broccoli on top. IT was great, but a little salty (probably the soy sauce because I added more otherwise there wouldn't have been enough sauce). And I only used 1T butter.
