Jicama Salad with Cilantro and Lime

Chicken Vegetable Barley Soup

very good. You don't need seasonings except salt. I used kale instead of carrots and added dumplings too, after blending half of it. It really is like a chicken noodle soup, but barley instead.

Cranberry Orange Cookies

Pretty good. I soaked my dried cranberries for an hour, then drained. I also used all rapadura sugar (not white/brown) and did 1/3 whole wheat.

Brown Sugar Meatloaf

Delicious. I added shredded carrots and chopped celery too. Reduce sugar to only 1/4 c! And used ground turkey. Add 1 T worcestershire sauce to the sauce and to the filling as well.

Slow-Cooker Pepper Steak

Good, but it's missing something. You could add pineapple in. And I wouldn't put the peppers in until an hour before the end or something because they get mushy. I also added 1/2 c water at least and had to stir the meat before the end so it was all moist.

Low-Fat Blueberry Bran Muffins

yummy and fluffy. I used 1/4 c honey instead of sugar and then sprinkled a little sugar on top of each. I also did 1 1/4 t baking powder with no baking soda. Next time I'll add a touch of cinnamon and some flax meal.

Stuffed Butternut Squash

Yummy. I used teryaki/soy sauce instead of tamari and added peas (omitted brussel sprouts). Might as well just cook the rice in the sauce with the carrots though, and then trow the peas in the last 3 minutes.

Pumpkin French Toast Bake

Paul liked it a lot, but it was a little bland because I just est. the spice.--don't est. and don't skimp on sugar. If you do, just put maple syrup on the bottom of the piece so it soaks up the bottom a little when you eat it (the top was plenty sweet).

Pumpkin Bean Soup

Very good. I also added a chili pepper. And I browned some stew meat cubes and threw those in to. I didn't have potatoes, so I cubed up some fresh pumpkin and threw that in with 1 c. pumpkin puree instead. Whipping cream wasn't needed. Just top with a little cheese and chips...like a taco soup. I think it helped that I accidently browned the onions and cumin a little.

100 Percent Whole Wheat Bread

Great for a 100% whole grain recipe. I halved it and did it in my bread machine on the wheat cycle at 1.5 lb loaf. Instead of all the extra stuff I just did flax. It's so fluffy, like store bought, but healthy!
